The difference between sheet cakes and 'regular cakes' is the pan that is used to bake them in. That is, sheet cakes are baked on cake sheets rather than in a pan.
Sheet cake pans come in three basic sizes.
A full cake sheet pan is 18X26", a half sheet pan is 13X18", and a quarter sheet pan is 9X13" in size. Most sheet pans are between ¾" to 2" inch tall. Note that these sizes approximate and can vary depending on the manufacturer.

Cake flour is used in this recipe to make a softer textured cake. While I suggest that you use actual cake flour for best results, you can make your own cake flour using all purpose flour and replacing two tablespoons in every cup used with cornstarch.

- In this recipe it is really important that your dairy products are at room temperature for best results. This includes your eggs, butter, and milk.
- When selecting a sugar alternative, choose one that is granular, measures like regular sugar, and can be baked with.
- Mix the ingredients until just combined. Do not overmix as doing so can ruin the texture of your cake.
- While my cake is a sheet cake, this recipe can also be made into cupcakes. You may need to make adjustments as needed for baking times.
How to store leftover sheet cake.
To keep the frosting fresh and the cake moist, your should first wrap the cake in plastic wrap and then if possible, top this off with foil. If properly stored and refrigerated this cake should keep for up to five days (unless you like to freeze individual pieces away for later 🙋♀️😋).

About this vanilla sheet cake recipe.
This is a simple sheet cake recipe that is made with no added sugar.
The cake is baked in a 9 X 13 cake pan .
This is an easy cake made with simple cake ingredients.
To make this cake even better we are using cake flour and pure vanilla extract. Once the cake has cooled we will frost it with a sugar free buttercream frosting.
Ingredient needed to make this sheet cake recipe.
- Cake Flour. This flour gives the cake a more fluffy and smooth texture than regular flour. This flour does not measure 1:1 with regular flour (for best results, do not sub in all purpose flour).
- Baking Powder and Baking Soda, used for leavening. Salt helps to balance out the flavors.
- Butter. Please use real butter that has also been cut into cubes. If you are using salted butter, you can omit the salt.
- Granular Sugar Alternative. For best results, please used a granular sugar alternative that measures like sugar and that can also be baked with.
- Eggs. Your eggs should be at room temperature for this recipe.
- Milk. Use whole milk to help the moisture in this cake.
- Pure Vanilla Extract. Please do not use imitation vanilla extract as this cake really depends upon the vanilla for flavoring.
Ingredients needed for the sugar free buttercream frosting
- Butter. Use unsalted butter that has been softened to room temperature.
- Sugar Free Powdered Sugar. You can use a whisk or sifter to make the powdered sugar even more fluffy.
- Vanilla Extract. Because this is a vanilla cake.
- Food Coloring. This is optional but, used to make buttercream frosting more colorful.
- Optional- Sugar Free Sprinkles for decoration.
Expert Tip 👉 For larger sized pieces, this cake can be baked in an 8" (square) or 9" (round) cake pan, making adjustments as needed for baking times. You could also bake this cake in a larger sheet cake pan (13X18") for smaller pieces, adjusting baking time as needed.
How to make Vanilla Sheet Cake with No Added Sugar.
- Start by preheating your oven to 325. Double prep a sheet cake pan for nonstick. I grease and then dust the pan with flour for example.
- In a medium bowl, use a whisk or sifter to blend together the cake flour, baking powder, baking soda and salt.
- Next, in a mixing bowl with the mixer fitted with a paddle attachment, beat together the butter and the sugar alternative on medium until creamy and fluffy. Scrape down the sides of the bowl and then add the eggs, one at a time, gently stirring and scraping between additions. Lastly, beat in the milk and vanilla extract until combined.
- For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. I like to fold in the ingredients and mix just until combined, avoiding over-mixing.
- Transfer the ingredients to the prepared cake sheet and bake in the center of the oven for 28-32 minutes or until a toothpick comes out clean when tested in the center. Allow the cake to fully cool on a cooling rack before frosting.
- For the buttercream frosting, beat the butter until creamy and then add the sugar free powdered sugar. Once the ingredients have been creamed together you can add the vanilla extract and food coloring and any additional sugar free powdered sugar for consistency.
- Evenly spread the buttercream frosting over the cooled cake using an offset spatula.
Expert Tip 👉 While my cake is a vanilla cake, you could make yours another flavor by changing the extract. I like maple extract or lemon extract for a cake like this one.
