Ingredients

  • 3 cups Raspberries - mashed
  • ¾ cup Water
  • 1.75 oz Pectin - for sugar free use.
  • ½ cup Splenda - granular sucralose

Instructions

  • Start by preparing your glass canning jars as indicated by the manufacturer for sterilization.
  • In a large stockpot (not on the stovetop yet), use a whisk or a large slotted spoon to combine together the raspberries, pectin, and water. Stir the ingredients constantly until the ingredients have fully dissolved together. Then allow the ingredients to sit for ten minutes.
  • Place this stockpot on the stove and bring it to a boil, stirring constantly. Once it boils for about a minute, you can carefully remove the stockpot from the stove and stir in the sucralose.
  • Skim off any foam as needed. Then carefully transfer the mixture to your prepared canning jars using a funnel or ladle, leaving between ½-¼" of room at the top.
  • Wipe down the rims of the jars to remove water or jam that may be on them. Securely seal the jars, as indicated by the manufacturer. Make sure that the bands are tight for boiling according to the manufacturer's directions for your canner.
  • For processing your jars in the hot water, it is best to use the directions that came with the canner as this can vary. It is usually between five to 10 minutes, depending on the size of the jar and the altitude.
  • After the jars are done processing and you have turned off the heat, remove lid and let jars stand for 5 minutes before removing the jars to cool. Allow your jars to cool completely as they will be hot.
  • Before storing your jars on a shelf, make sure that the seal is set by pressing in the center. If the center of the lid does not move, your should be good to go.
