- Butter Your butter should be softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Sugar Alternative. For best results, use a granular sugar alternative that measures like sugar and that can also be baked with.
- Eggs. Use large eggs that are at room temperature.
- Milk. Added for moisture, a full fat milk works best in this recipe.
- Vanilla Extract. Where we get the vanilla flavor from.
- Strawberries. The stems and leaves should be removed and the strawberries should be sliced.
Expert Tip👉 You will notice that there are a few strawberries on top of my cake that have their stems and leaves attached. This is purely for decorative purposes although, some folks have no problem eating the green parts of the strawberries.

My cake was made with strawberries. Feel free to use other berries in addition or instead of the strawberries. You can even add a few blueberries on top with the strawberries.

- My cake was made with an eight inch springform cake pan. While you could use another kind of cake pan, keep in mind that bake times can vary which means that it is a good idea to keep an eye on your cake while it is baking.
- The flavor of this cake is really about the vanilla that is added to it. I would use pure vanilla rather than imitation vanilla for that reason.
- When selecting strawberries to use, use firm strawberries that are similar in size. Larger strawberries can be used for decoration.
- Frozen strawberries will not work as well in this recipe as they are soft and tend to have more moisture in them.
- If your cake seems to be baking too fast (it is turning golden before being baked through) you can try using a foil tent that is loosely placed on top to help the cake bake more evenly.
- This cake recipe also works well with cupcakes. The baking time will be shorter however, so keep an eye on the cupcakes while baking.
How to make this Sugar Free Strawberry Cake Recipe.

- Start by preheating your oven to 325 and prepping your cake pan well for nonstick. I like to line my cake pan with parchment paper and lightly spray or dust my cake pan over the paper for a recipe such as this one.
- In a medium bowl, use a whisk to combine together the flour and baking powder.
- Next, in a mixing bowl with a mixer outfitted with a paddle attachment, beat together your butter and sugar alternative until creamy. Then scrape down the sides of the bowl and add the eggs, one at a time, lightly beating between additions. Then beat in the milk and vanilla extract.
- For the next step, we will add the dry ingredients from the first bowl to the mixing bowl with the wet ingredients. Start by scraping down the sides of the bowl and then use a slow speed while you gradually add the dry ingredients. Mix until just combined.
- Transfer the cake batter to the prepared cake pan and then arrange the sliced strawberries on top.
- Bake the cake for 45-50 minutes or until the cake has baked through and a toothpick comes out clean.
- Let the cake cool for 10 minutes in the pan before loosening the sides from the springform pan and transferring the cake to a cooling rack to fully cool.
Expert Tip 👉 The cake is baked through when it is golden brown and springs back when lightly touched in the center.
How to store leftover cake.
Once the cake has fully cooled, it should be stored in an airtight container.
When properly stored, this cake should keep for up to three days at room temperature or frozen for up to three months (thaw at room temperature).
