Ingredients needed to make sugar free cinnamon roll muffins.
The ingredients are are divided into muffins, streusel topping, and glaze.
Muffins Ingredients.
- Self Rising Flour. Self rising flour has the leaveners already added to it. This saves us the step of blending them together in a separate bowl.
- Brown Sugar Alternative. For best results, select a granular brown sugar alternative that measures like brown sugar and that can also be baked with.
- Ground Cinnamon. Gives the muffins that desired flavor.
- Milk. Use whole milk for optimal moisture. I would not use anything less than 2% milk in this recipe.
- Oil. Use a neutral oil such as vegetable oil.
- Egg. Your egg should be at room temperature for optimal blending.
- Vanilla Extract. Added for flavor balance.
Streusel Topping Ingredients.
- Butter. The butter should be melted.
- Sugar Alternative and Brown Sugar Alternative. Again, use granular sugar alternatives that measure like sugar and that can also be baked with.
- Ground Cinnamon. For flavor.
- Flour. Used to get the topping crumbly.
Glaze Ingredients.
- Sugar Free Powdered Sugar. Granular sugar will not work in making glaze.
- Vanilla Extract. Added for flavor.
- Milk. Use to make the glaze a good consistency for drizzling on to the tops of these muffins.
Tips for making the best cinnamon roll muffins.
This recipe is made using self rising flour. While the actual self rising flour is preferred, you can substitute in two cups all purpose flour and two teaspoons baking powder that have been whisked together.
More helpful tips for you.
- While my muffins are made in a standard size muffin or cupcake pan, you could use another size. This recipe could work with a mini-muffin pan or a giant muffin pan for example, making adjustments as needed in baking time.
- You can give your muffin liners a quick spray with nonstick to help prevent sticking if needed.
- When combining the ingredients, mix until just combined. Overmixing will make a more dense muffin and can cause large air pockets.
- I like to use a cookie scoop to scoop the muffin batter into the muffin cups. This also makes it easier to evenly divide the batter between the muffin liners.
- These muffins are baked through if they can spring back when lightly touched in the center. Alternatively, you can use the toothpick test.
- It is best to allow the muffins to fully cool before adding the glaze. This will help the glaze set better.
How to make Sugar Free Cinnamon Muffins
Prep Time: 15 minutes .
Bake Time: 20 minutes .
Servings: 12 average sized muffins.
- Preheat your oven to 350 and prep your muffin pan for nonstick. Liners work well in a recipe such as this one.
- In a large mixing bowl, use a whisk to combine together the self rising flour, brown sugar alternative and ground cinnamon. Then make a well (use a large spoon or rubber spatula to push the ingredients to the sides) in the center of the mixture.
- Next, in another bowl, combine together the milk, oil, egg, and vanilla extract. You can use a clean whisk to do this.
- Pour the wet ingredients from the second bowl into the well you made in the dry ingredients. Then mix the ingredients until just combined.
- Fill each of the muffin liners three fourths full.
- To make the crumble topping, combine together the melted butter, both sugar alternatives, and ground cinnamon in a mixing bowl then add the flour to the mixture to make it crumbly. Evenly distribute this over the muffins.
- Bake the muffins in the center of your oven for 20 minutes or until they have turned golden brown and a toothpick comes out clean.
- Allow the cupcakes to cool in the pan for five minutes before transferring them to a cooling rack to fully cool.
- To make the glaze, simply combine together the glaze ingredients, making ingredient adjustments as needed until you reach your desired consistency. Then use a spoon to drizzle it over the cooled muffins.
Expert Tip ๐ Browning your butter for the streusel topping will give it a nutty flavor that can make your muffins amazing.
