Sugar Free Cinnamon Muffins

  • Preheat your oven to 350 and prep your muffin pan for nonstick.
  • In a large mixing bowl, use a whisk to combine together the self rising flour, brown sugar alternative and ground cinnamon. Then make a well in the center of the mixture.
  • Next, in another bowl, combine together the milk, oil, egg, and vanilla extract. You can use a clean whisk to do this.
  • Pour the wet ingredients from the second bowl into the well you made in the dry ingredients. Then mix the ingredients until just combined.
  • Fill each of the muffin liners three fourths full with the batter.
  • To make the crumble topping, combine together the melted butter, both sugar alternatives, and ground cinnamon in a mixing bowl then add the flour to the mixture to make it crumbly.
    Evenly distribute this over the muffins.
  • Bake the muffins in the center of your oven for 20 minutes or until they have turned golden brown and a toothpick comes out clean.
    Allow the cupcakes to cool in the pan for five minutes before transferring them to a cooling rack to fully cool.
  • To make the glaze, simply combine together the glaze ingredients, making ingredient adjustments as needed until you reach your desired consistency. Then use a spoon to drizzle it over the cooled muffins.
