Made with actual eggnog, this cake captures the rich, creamy, and warmly spiced flavor of traditional eggnog only in a cake form- it is the best of both worlds!

What you need to make an eggnog cake.
- Sugar Free Yellow Cake Mix. Keto folks can use a keto friendly cake mix.
- Nutmeg. Ground nutmeg is added to enhance the flavor of the cake.
- Eggnog. You can use a sugar free eggnog such as this this Sugar Free Eggnog or the eggnog of your choice.
- Butter. Use melted butter or an oil such as canola oil.
- Eggs. The eggs should be at room temperature.
- Vanilla Extract. Feel free to use another extract such as rum or maple extract.
How to make Eggnog Cake.
Prep time: 10 minutes.
Bake time: 35-40 minutes.

Two 8" round cake pans were used to make my cake.
- Start by double prepping two 8" pans (such as greasing and dusting with flour). Also preheat your oven to 350.
- In a large mixing bowl, use a whisk to break up any lumps in the dry cake mix. Then mix in the nutmeg.
- Add the eggnog, melted butter, eggs, and extract to the bowl and beat until just combined.
- Evenly transfer the cake batter to the prepared cake pans and bake in the center of the racks until a toothpick comes out clean (about 35-40 minutes).
- Remove the cake pans from the oven and allow the cakes to cool for about ten minutes in the pans before transferring them to a wire cooling rack to finish cooling.
- You can find recipes for sugar free frosting here if you want to frost your cakes. Substitute in eggnog for all or part of the cream or milk for added flavor.
Tips for making the best eggnog cake.
My cake was made as a traditional layered cake. You however can make this a more dense bundt style cake by adding a box of vanilla pudding, two extra eggs, and one less cup of eggnog (making adjustments as needed for baking).
More helpful tips for you.
- My cake uses sugar free eggnog. Alternatively, you can use regular eggnog or heavy cream instead.
- This recipe can also be made in a rectangular sheet style pan. You may need to adjust the baking time as needed however.
- If you want a filling other than frosting you can combine together a box of instant pudding with a cup and a half of additional eggnog (adjusting as needed for texture).
- Allow the cake to set for about 10 minutes in the cake pan after taking it out of the oven. Then you can remove the cake and allow it to finish cooking on a cooling rack.

How to store cake made with eggnog .
Once your unfrosted eggnog cake has fully cooled, it can be stored in an airtight container for up to a couple of days at room temperature. Frosted cakes should be stored in an airtight container and refrigerated for up to five days or frozen for up to a few months. I like to store my cake in a covered cake carrier or stand.
