  • Preheat your oven to 325 and prepare two baking sheets for nonstick.
  • In a medium bowl, whisk together the almond flour, coconut flour, and baking powder.
  • Next, in a mixing bowl, beat together the sugar alternative with the cream cheese until creamy.
  • Add the eggs and vanilla extract to the mixing bowl and mix until combined.
    Now, use a rubber spatula to fold in the dry ingredients from the first bowl to the mixing bowl. Mix this until just combined.
  • Use a medium sized cookie scoop to first scoop out the dough and then roll the dough into balls between your palms.
  • Place the dough balls on to the baking sheet about two inches apart. Then slightly flatten the cookies with the palm of your hands.
  • Bake the cookies until the edges begin to turn golden brown (about 14-16 minutes). Allow the cookies to cool on the baking sheet before transferring them.
