  • Preheat your oven to 350 and prepare your baking sheet(s) for nonstick.
  • In a medium bowl, use a whisk to mix together the flour, baking soda, and ground cinnamon. Set this bowl aside.
  • Next, in a large mixing bowl, beat together the butter with the sugar alternatives until creamy. Then mix in the eggs and the vanilla extract.
  • Add the dry ingredients from the first bowl to the large mixing bowl and mix until just combined. Then stir in the oats and the raisins.
  • Use a spoon or cookie scoop to scoop the cookie dough and then place the cookies on to the prepared baking sheets about 1 1/1 to two inches apart.
  • Bake the cookies for 10-12 minutes or until the edges begin to brown. Then remove the baking sheets from your oven and let the cookies sit for about five minutes before transferring them to a cooling rack to fully cool.
