Ingredients

  • 1 lb Breakfast Sausage - cooked and crumbled
  • 1 cup Low Carbohydrate Baking Mix - See Post For Details and Alternatives.
  • cup Almond Milk - See Post for Alternatives.
  • 1 tbsp Oil
  • 2 cups Cheddar Cheese - grated or shredded
  • ½ cup Green Onions - chopped

Instructions

  • Preheat your oven to 350 and prep your muffin pan well for nonstick.
  • Place the baking mix in a large bowl and use a whisk or fork to break up any lumps. Add the milk and oil to the baking mix and stir until combined.
  • Next, use a rubber spatula to fold in the cheese and the green onion. Then fold in the crumbled sausage.
  • Use a scoop to fill the muffins liners with a batter.
  • Bake the muffins for 20-22 minutes or until the tops turn golden brown. Then let the muffins sit int he pan for a few minutes before transferring to finish cooling.
