Instructions

  • Prepare. Line a 9x13" baking pan or dish with parchment paper that overhangs the sides of the pan.
  • Dry Ingredients. In a large bowl, combine together the old fashioned oats and rice cereal.
  • Stovetop. Using a large pot on medium-high heat, melt together the butter, brown sugar alternative, vanilla extract, and maple syrup. Heat the ingredients, stirring or whisking as needed, until the butter has fully melted. Then stir or whisk the ingredients continually for one more minute before removing them from the heat.
  • Combine. Next, carefully use a rubber spatula or similar item to fold in the dry ingredients from the bowl with the warm ingredients from the stove. You can do this in the large mixing bowl if your pot is not large enough.
  • Chocolate Chips. Lastly, fold in your chocolate chips until they are evenly distributed throughout the mixture.
  • Set. Transfer your mixture to your prepared baking pan and use the backside of your rubber spatula or a spoon to press the mixture in place. Then place your granola bars in your freezer until set (about an hour).
