  • Preheat you oven to 350 and prep a loaf pan well for nonstick.
  • In a medium bowl, use a whisk or sifter to combined the flour and baking soda.
  • Next, in a mixing bowl, beat together the brown sugar alternative with the butter until creamy and smooth. Then beat in the mashed bananas followed by the eggs until incorporated into the mixture.
  • Add the dry ingredients from the first bowl to the mixing bowl and mix until just incorporated.
  • Use a rubber spatula or similar item to gently fold in the strawberries, ensuring they are evenly distributed throughout the bread batter.
  • Evenly distribute the batter in your loaf pan and bake for 55-60 minutes or until it turns golden brown and a toothpick comes out clean.
  • Let the bread sit at room temperature in the pan for 10 minutes. Then run a butter knife around the edges for the pan to loosen the bread before transferring it to a wire cooling rack to finish cooling.
