Sugar Free Brownie Baked Oatmeal

  • Preheat your oven to 350 and prep a square baking dish for nonstick.
  • In a large mixing bowl, use a whisk to combine together the oatmeal, unsweetened cocoa powder, sugar alternatives, and the baking powder. Then make a shallow well in the center of the ingredients.
  • Next, in another mixing bowl, beat together the eggs, milk, applesauce, and vanilla extract until combined. Then pour this mixture into the well that you made in the dry ingredients in the first bowl and mix until just combined.
  • Use a rubber spatula or similar object to fold in about half of the chocolate chips. Then transfer the batter into the prepared baking dish, evenly spreading it as needed.
  • Top the oatmeal brownies with the remaining chocolate chips and bake for 40-45 minutes or until the edges appear to be set and the center is somewhat firm.
  • Let the baked brownie oatmeal sit in the baking dish for 10 minutes before serving.
