    Prep Time- 15 minutes .
    Bake Time- 45 minutes .
    Servings- 9, depending on how it is sliced .

    1. Preheat your oven to 350 and prep a square baking dish for nonstick. Greasing works okay as does parchment paper.
    2. In a large mixing bowl, use a whisk to combine together the oatmeal, unsweetened cocoa powder, sugar alternatives, and the baking powder. Then make a shallow well in the center of the ingredients.
    3. Next, in another mixing bowl, beat together the eggs, milk, applesauce, and vanilla extract until combined. Then pour this mixture into the well that you made in the dry ingredients and mix until just combined.
    4. Use a rubber spatula or similar object to fold in about half of the chocolate chips. Then transfer the batter into the prepared baking dish, evenly spreading it as needed.
    5. Top the oatmeal brownies with the remaining chocolate chips and bake for 40-45 minutes or until the edges appear to be set and the center is somewhat firm.
    6. Let the baked brownie oatmeal sit in the baking dish for 10 minutes before serving.

    It is recommended that you use rolled or old fashioned oats as they bake better than other oats in a recipe such as this one. These oats also give a better, more chewy, texture that is desired in this recipe.

    1. This recipe is baked in a square baking dish. For larger servings, you can use an 8x8" dish and for more servings you can use a 9x9" dish.
    2. For more of a brownie and less of a baked oatmeal, you can use quick oats for part or all of the rolled old fashioned oats.
    3. Chocolate chips are added for a fudgy texture. You can add additional chips for even more fudge or no chocolate chips if you are not a fan of fudgy brownies.
    4. Feel free to add in extras such as nuts, coconut flakes, or even a handful of raisins to make this even better.
    5. To cut this into pieces for serving, let the oatmeal set in the baking dish after taking them out of the oven.
    6. While my oatmeal is baked in a square baking dish, you could make yours in something else like a ramekin. Keep in mind that baking times may vary.
    7. Lastly, depending on the kind of square baking dish that you are using, baking times can vary as metal baking pans heat faster than glass baking dishes. Either can be used in this recipe however.

    Once the brownie oatmeal has fully cooled, you can store it in an airtight container. If properly stored, this oatmeal should keep for about four days in a refrigerator or frozen for up to a few months.
