- Baking Powder. Added to give these cookies a bit of height.
- Sugar Alternative and Brown Sugar Alternative. For best results, select granular sugar alternatives that measure like regular sugar and that can also be baked with.
- Eggs. Your eggs should be at room temperature for better blending.
- Vanilla Extract. Added for flavor balance.
- Sugar Free Chocolate Chips or Chopped Unsweetened Chocolate. Darker chocolate will make these cookies more decadent.

How to Make Sugar Free Chewy Brownie Cookies.
Prep Time: 15 minutes.
Bake Time: 15 minutes.
Servings: 18 cookies.
- Preheat your oven to 350 degrees. Prepare your baking sheet(s) for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
- In a medium bowl, use a whisk to combine together the flour, unsweetened cocoa powder, and the baking soda.
- Next, in a microwave-safe bowl, melt together the butter with the chocolate chips or chunks until smooth, stopping to stir every 20-30 seconds.
- In a large mixing bowl with a mixer outfitted with a paddle attachment, beat together the sugar alternatives, eggs, and vanilla on high until light and fluffy. Once the melted chocolate has cooled to room temperature you can mix it into the mixing bowl with the other ingredients.
- Fold in the dry ingredients from the first bowl to the mixing bowl until combined. Then let the cookie batter to set for five minutes.
- Use a medium sized cookie scoop to scoop out the cookie dough and place the cookies about at least an inch and a half apart from one another.
- Bake the cookies for 12-15 minutes or until edges appear to be set (the center will still be soft).
- Let the cookies sit on the baking sheet for about ten minutes to cool as this will help the center set. Then transfer the cookies to a cooling rack.
Expert Tip👉To freeze these chewy brownie cookies, allow the cookies to fully cool. Then place the cookies in a single layer on a baking sheet and freeze for two hours. Once they are frozen, transfer the cookies to a freezer-safe bag or container. Chewy brownie cookies can be frozen for up to three months.
