    Technically, brownie cookies are a 'hybrid' baked good.
    That is, brownie cookies have elements of both brownies and cookies in them.

    Brownie cookies contain unsweetened cocoa and are chewy on the inside, just like a brownie. However, brownie cookies are baked and look more like a cookie.

    1. Make these cookies keto low carbohydrate diet friendly by using a keto low carbohydrate all purpose flour. You will also need to use keto low carbohydrate chocolate chips (most sugar free chips are also low carb).
    2. The cookie dough will need to set and thicken before scooping out the dough. You can place the cookie dough into your refrigerator at this point to help with this and to help the cookies keep their shape (not spread so much) while baking.
    3. A bit of salt on top of the cookies gives the perfect balance to these sweet cookies. It is best to use a large salt such as Kosher salt or salt flakes for both aesthetics and better flavor.

    Ingredients needed to make Chewy Brownie Cookies

    • Flour. All purpose flour was used to make my cookies. You can use an alternative flour such as low carb flour or gluten free flour as long as it measures and bakes like all purpose.
    • Unsweetened Cocoa Powder. This helps make these cookies chocolaty like a brownie.
    • Baking Powder. Added to give these cookies a bit of height.
    • Sugar Alternative and Brown Sugar Alternative. For best results, select granular sugar alternatives that measure like regular sugar and that can also be baked with.
    • Eggs. Your eggs should be at room temperature for better blending.
    • Vanilla Extract. Added for flavor balance.
    • Sugar Free Chocolate Chips or Chopped Unsweetened Chocolate. Darker chocolate will make these cookies more decadent.
    • Optional- salt flakes for topping.

    How to Make Sugar Free Chewy Brownie Cookies.

    Prep Time: 15 minutes.
    Bake Time: 15 minutes.
    Servings: 18 cookies.

    1. Preheat your oven to 350 degrees. Prepare your baking sheet(s) for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
    2. In a medium bowl, use a whisk to combine together the flour, unsweetened cocoa powder, and the baking soda.
    3. Next, in a microwave-safe bowl, melt together the butter with the chocolate chips or chunks until smooth, stopping to stir every 20-30 seconds.
    4. In a large mixing bowl with a mixer outfitted with a paddle attachment, beat together the sugar alternatives, eggs, and vanilla on high until light and fluffy. Once the melted chocolate has cooled to room temperature you can mix it into the mixing bowl with the other ingredients.
    5. Fold in the dry ingredients from the first bowl to the mixing bowl until combined. Then let the cookie batter to set for five minutes.
    6. Use a medium sized cookie scoop to scoop out the cookie dough and place the cookies about at least an inch and a half apart from one another.
    7. Bake the cookies for 12-15 minutes or until edges appear to be set (the center will still be soft).
    8. Let the cookies sit on the baking sheet for about ten minutes to cool as this will help the center set. Then transfer the cookies to a cooling rack.

    Expert Tip๐Ÿ‘‰To freeze these chewy brownie cookies, allow the cookies to fully cool. Then place the cookies in a single layer on a baking sheet and freeze for two hours. Once they are frozen, transfer the cookies to a freezer-safe bag or container. Chewy brownie cookies can be frozen for up to three months.
