  • Preheat your oven to 350 degrees. Prepare your baking sheet(s) for nonstick.
  • In a medium bowl, use a whisk to combine together the flour, unsweetened cocoa powder, and the baking soda.
  • Next, in a microwave-safe bowl, melt together the butter with the chocolate chips or chunks until smooth, stopping to stir every 20-30 seconds.
  • In a large mixing bowl with a mixer outfitted with a paddle attachment, beat together the sugar alternatives, eggs, and vanilla on high until light and fluffy.
    Once the melted chocolate has cooled to room temperature you can mix it into the mixing bowl with the other ingredients.
  • Fold in the dry ingredients from the first bowl to the mixing bowl until combined. Then let the cookie batter to set for five minutes.
  • Use a medium sized cookie scoop to scoop out the cookie dough and place the cookies about at least an inch and a half apart from one another. Bake the cookies for 12-15 minutes or until edges appear to be set .
  • Let the cookies sit on the baking sheet for about ten minutes and then transfer the cookies to a cooling rack.
