Sugar Free Chewy Lemon Cookies

  • Prepare Preheat your oven to 350°F. Also prep your baking sheet(s) for nonstick. Parchment paper or a baking mat should work in this recipe.
  • Dry Ingredients. In a small bowl, use a whisk to combine together the flour, baking powder, and baking soda.
  • Cream. In a large bowl, beat together the butter and sugar alternative together on medium-high speed until creamy (about two minutes). Scrape down the sides of the bowl and add the egg, lemon juice and lemon zest. Mix the ingredients until light and fluffy (about two more minutes).
  • Combine. Scrape down the sides of the bowl once again. Add the dry ingredients from the first bowl to the mixing bowl and mix on low until the ingredients are just combined.
  • Bake. Use a medium cookie scoop to scoop out the cookie dough, roll the dough between your hands, and the place the cookies about two inches apart on the prepared baking sheet. Use the palm of your hand or the bottom of sturdy cup to gently press the cookies into the shape of a disc. Bake the cookies for 10-12 minutes or until the cookies appear to be set in the center and the edges begin to turn golden brown.
  • Cool. Allow the cookies to sit on the baking sheet for five minutes before transferring to a cooking rack to fully cool. Once the cookies have fully cooled you can drizzle melted white chocolate chips over them or enjoy as is!
