    What you need to make lemon cookies.

    • Flour Regular all purpose flour.
    • Baking Powder and Baking Soda Leaveners used.
    • Butter. Use salted butter that is softened.
    • Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with.
    • Egg Large egg at room temperature.
    • Lemon Juice. and Lemon Zest. Freshly squeezed and freshly zested is preferred.
    • Optional. Sugar free white chocolate baking chips for drizzling on top.

    • Bake Time 12 minutes .

    1. Prepare Preheat your oven to 350°F. Also prep your baking sheet(s) for nonstick. Parchment paper or a baking mat should work in this recipe.
    2. Dry Ingredients. In a small bowl, use a whisk to combine together the flour, baking powder, and baking soda.
    3. Cream. In a large bowl, beat together the butter and sugar alternative together on medium-high speed until creamy (about two minutes). Scrape down the sides of the bowl and add the egg, lemon juice and lemon zest. Mix the ingredients until light and fluffy (about two more minutes).
    4. Combine. Scrape down the sides of the bowl once again. Add the dry ingredients from the first bowl to the mixing bowl and mix on low until the ingredients are just combined.
    5. Bake. Use a medium cookie scoop to scoop out the cookie dough, roll the dough between your hands, and the place the cookies about two inches apart on the prepared baking sheet. Use the palm of your hand or the bottom of sturdy cup to gently press the cookies into the shape of a disc. Bake the cookies for 10-12 minutes or until the cookies appear to be set in the center and the edges begin to turn golden brown.
    6. Cool. Allow the cookies to sit on the baking sheet for five minutes before transferring to a cooking rack to fully cool. Once the cookies have fully cooled you can drizzle melted white chocolate chips over them or enjoy as is!

    Using freshly squeezed lemon zest and lime zest is recommended for the optimal flavor in these cookies. This is the best way to be sure that there is no added sugar in this recipe as sometimes lemon juice will have sugar added to it.

    1. Softened butter makes these cookies 'pillowy' and soft. For a more chewy and thinner cookie, use melted butter and slightly cooled.
    2. For a "fudgy" center in your cookies, you can add an egg yolk with the whole egg. This will help make the centers of the cookies dense and fudgy.
    3. You can make the cookie dough in advance. This cookie dough should keep for up to three months when frozen. I would shape the cookies and freeze them in single layer so that they are ready to go.

    Instructions
