Tips for making the best Chewy Lemon Cookies.
Using freshly squeezed lemon zest and lime zest is recommended for the optimal flavor in these cookies. This is the best way to be sure that there is no added sugar in this recipe as sometimes lemon juice will have sugar added to it.
More helpful tips for you.
- Softened butter makes these cookies 'pillowy' and soft. For a more chewy and thinner cookie, use melted butter and slightly cooled.
- For a "fudgy" center in your cookies, you can add an egg yolk with the whole egg. This will help make the centers of the cookies dense and fudgy.
- You can make the cookie dough in advance. This cookie dough should keep for up to three months when frozen. I would shape the cookies and freeze them in single layer so that they are ready to go.
FAQ
- Why are my lemon cookies cakey instead of chewy? This can be cause by adding too much leaveners (baking soda and baking powder) or by overmixing. When you add the dry ingredients to the mixing bowl, mix the ingredients unit JUST COMBINED as overmixing them introduces extra air .
- Shouldn't I chill cookie dough? Chilling the cookie dough is not necessary for this recipe. You can refrigerate it for up to a couple of days if you want to prepare the dough in advance.
- Can I make this recipe with a liquid sugar alternative ? It is recommended that you use a granular sugar alternative that measures like sugar and that can also be baked with for best results. Using an alternative that is not granular can throw off the wet to dry ingredient balance of this recipe.
Variations.
- Make this recipe using a different citrus fruit such as limes.
- Add sugar free white baking chips.
- Roll the dough balls in additional granular sugar alternative to make this like a 'sugar' cookie.

How to Store Homemade Lemon Cookies
