Tips for making the best chocolate chip brioche rolls
Ingredient temperatures matter in this recipe. The milk should be lukewarm and your eggs and butter should be at room temperature. Cold eggs can shock the yeast and cause the butter to clump, preventing that silky, homogenous dough texture that brioche is famous for.
More helpful tips for you.
- Make sure that your yeast is foamy as this is an indicator of whether or not your yeast is alive. If the yeast does not foam up it can result in tough, rubbery rolls. This why the milk needs to be warm.
- For more golden rolls, you can brush them with a simple egg wash before putting them in the oven.
- Freezing your chocolate chips for 20 minutes before folding them into the dough can help them stay intact while baking- preventing streaking.
FAQ
- Why did my rolls not rise? It is important that the milk is warm before it is combined with the yeast. The yeast depends on the warm milk and the sugar that is in it to properly bloom.
- Why is the butter melted in this recipe? The butter is melted so that it can incorporate more evenly into the other ingredients. This helps to keep the rolls fluffy and buttery.
- Can I make the dough ahead of time? You can let the dough rise in the refrigerator overnight (up to 24 hours). The cold temperature can make the high-fat dough much easier to shape and improves the overall flavor as well.
- What if my dough is too sticky to handle while kneading Put the dough into your refrigerator for 30–60 minutes. Once the butter in the dough firms up, the stickiness will vanish, and the dough will become much more manageable.
Variations.
- Instead of making this recipe as rolls, make this into a brioche loaf using a loaf pan. Baking times can vary.
- Add a teaspoon of ground cinnamon for added flavor.
- Use a broken up baking bar instead of the chips.

How to store brioche rolls
Once your rolls have fully cooled they can be stored at room temperature for up to five days or frozen for up to a few months. These rolls should not however be refrigerated as the cool temperature can affect that fluffy texture.
