Ingredients

  • ½ cup Milk -- Use whole milk that is warm- lukewarm (100-105f).
  • 1 tbsp Active Dry Yeast
  • cup Sugar Alternative. --Use a granular sugar alternative that measures like sugar and that can also be bakes with.
  • ½ cup Butter. --Salted butter that has been melted.
  • 4 Eggs. --Large eggs at room temperature.
  • 4 cups Flour
  • cups Sugar Free Chocolate Chips -No added sugar chocolate chips or baking bar broken up that can be baked with .

Instructions

  • Yeast. To activate the yeast, place the yeast in a large mixing bowl along with the warm milk, Whisk the ingredients together until just combined and the ncover the bowl with a clean kitchen towel and allow it to rest until foam appears (about five minutes).
  • Combine Once the foam appears you can add the melted butter, eggs, and sugar alternative to the bowl. Whisk the ingredients until well combined.
  • Flour. Add about half of the flour to the mixing bowl, whisk the ingredients, scrape down the sides of the bowl and then add the remaining flour mixing until just combined.
  • Knead. On a clean surface that has been lightly floured, knead the dough by hand until the dough is smooth and elastic (about five minutes). Return the dough back in the mixing bowl and cover with plastic wrap. Let the dough rest for about an hour, or until it has doubled in size.
  • Chocolate Chips. After the dough has rested and doubles, punch the dough down to remove air bubbles. Then fold or use your hands to incorporate the chocolate chips into the dough.
  • Prepare. Lightly prep your baking dish for nonstick. Divide the dough in half and then divide the halves in half until you have 12 equal pieces. Loosley shape the pieces into balls and place each of the balls into a prepared baking dish. Place a clean kitchen towel over the dough.
  • Bake. Preheat your oven to 350°F. Once the oven reaches 350°F. you can remove the kitchen towel from the baking dish and place the rolls into your warm oven. Bake the rolls for 20-25 minutes, or until they are golden brown and reach an internal temperature of 150°F.
