  • Start by preheating your oven to 325 and prepping your skillet for nonstick if needed.
  • In a medium bowl, use a whisk to combine together the flour, baking soda, and optional salt.
  • Next, in a mixing bowl, combine together the cooled melted butter with the sugar alternatives (both brown and white sugar alternatives). Then stir in the eggs and vanilla extract.
  • Add the dry ingredients from the first bowl to the ingredients in the mixing bowl and mix until just combined. Then use your rubber spatula to fold in half of the sugar free chocolate chips.
  • Transfer the ingredients to your prepared skillet and use the backside of your spoon or your hands to press the cookie dough into place. Top the cookie with the remaining chocolate chips and bake for 20-25 minutes or until the cookie begins to turn golden brown.
  • Carefully remove the cookie from your oven and let it cool for at least 20 minutes before serving.
