Sugar Free Chocolate Chip Sugar Cookies

  • In a medium bowl, use a whisk to combined together ¾ of a cup of the flour with baking powder (and optional salt).
  • Next, in a mixing bowl, beat together the softened butter and sugar alternative on high until smooth and creamy (this can take up to a few minutes to get the right texture).
  • Bump the mixer down to low speed and add the eggs and vanilla extract to the bowl and beat until incorporated (about a minute).
  • Scrape down the side of the mixing bowl and then add the dry ingredients from the first bowl to the wet ingredients. Mix the ingredients on low until just combined.
  • Use a rubber spatula or similar item to fold in the chocolate chips.
  • Place the remaining sugar alternative into a shallow bowl.
  • Use a small cookie scoop to scoop out the cookie dough, roll the dough between your hands to form a ball, and then roll the dough through the sugar alternative in the shallow bowl.
  • You can place the rolled cookie balls onto a plate or cookie sheet that can fit into your refrigerator. Refrigerate your cookie balls for at least an hour to set.
  • When you are ready to bake your cookies, preheat your oven to 350 and prep your baking sheet(s) with parchment paper. Place the cookie balls on the parchment paper, leaving space for expansion while baking.
  • Bake your cookies for eight to 10 minutes or until they become fluffy in the center and almost a light golden brown on the edges. Do not let the cookies bake too long.
  • Let the cookies sit on the baking sheet for two to three minutes before transferring to a cooling rack to fully cool. While they are sitting on the baking sheet you can add additional chocolate chips to the top.
