    • Baking Powder This is used to make the cookies fluffy.
    • Butter. Your butter should be softened to room temperature for optimal blending. If you are using unsalted butter, you can add a teaspoon of salt to your flour.
    • Sugar Alternative. Use a granular sugar alternative measures like regular sugar and that can also be baked with. You will need additional alternative for rolling out the cookies.
    • Eggs. Large eggs at room temperature.
    • Sugar Free Chocolate Chips. Mini-chips were used to make my cookies so that they do not overtake the sugar cookie elements in this cookie.

    These cookies are meant to be more like a fluffy sugar cookie that has chocolate chips added to them. This is why we are not adding ingredients such as brown sugar alternative to them.

    1. Using fresh ingredients is essential to making a good cookies. This is especially true for your dry ingredients.
    2. Measure your flour by scooping and leveling it out. This will help keep the balance between wet and dry ingredients intact.
    3. When combining your wet and dry ingredients, mix until the ingredients are just combined. This will help keep the gluten from overworking and resulting in a tough cookie.
    4. Refrigerating the dough is an important step in making these cookies. This helps keep the structure of your butter and keep the texture thick and fluffy.
    5. Use a cookie scoop to scoop out the dough and keep the cookies a uniform size.
    6. Do you have to use sugar free chocolate chips to make this recipe? That is entirely up to you and how much sugar you want in your cookies.
    7. Can I use a blend of sugar and sugar alternative? This recipe has been adjusted for using granular sugar alternative that measures like regular sugar.     How to make Sugar Free Chocolate Chip Sugar Cookies

    Prep Time: 15 minutes .
    Bake Time: 10 minutes .
    Servings: 24, depending on the size of the scooped used. .

    1. In a medium bowl, use a whisk to combined together ¾ths of a cup of the flourwith the baking powder (and optional salt).
    2. Next, in a mixing bowl, beat together the softened butter and sugar alternative on high until smooth and creamy (this can take up to a few minutes to get the right texture).
    3. Bump the mixer down to low speed and add the eggs and vanilla extract to the bowl and beat until incorporated (about a minute).
    4. Scrape down the side of the mixing bowl and then add the dry ingredients from the first bowl to the wet ingredients. Mix the ingredients on low until just combined.
    5. Use a rubber spatula or similar item to fold in the chocolate chips.
    6. Place the remaining sugar alternative into a shallow bowl.
    7. Use a small cookie scoop to scoop out the cookie dough, roll the dough between your hands to form a ball, and then roll the dough through the sugar alternative in the shallow bowl. You can place the rolled cookie balls onto a plate or cookie sheet that can fit into your refrigerator.
    8. Refrigerate your cookie balls for at least an hour to set.
    9. When you are ready to bake your cookies, preheat your oven to 350 and prep your baking sheet(s) with parchment paper.
    10. Place the cookie balls on the parchment paper, leaving space for expansion while baking.
    11. Bake your cookies for eight to 10 minutes or until they become fluffy in the center and almost a light golden brown on the edges. Do not let the cookies bake too long.
    12. Let the cookies sit on the baking sheet for two to three minutes before transferring to a cooling rack to fully cool. While they are sitting on the baking sheet you can add additional chocolate chips to the top.
