- Milk. The milk needs to be warm to help activate the yeast.
- Yeast. Instant Dry Yeast.
- Brown Sugar Alternative. Use a granular alternative that can also be baked with.
- Bread Flour.A higher protein flour that gives these rolls a better rise and a more chewy texture.
- Pumpkin Pie Spice. Adds that seasonal touch to these rolls.
- Pumpkin Puree. Use a pumpkin puree that has no other ingredients, such as sugar, added to it.
- Butter. Softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Egg. Your egg should be at room temperature.
- Pumpkin seeds and melted butter for serving.
Tips for making the best Pumpkin Rolls.
Bread flour is used in this recipe to give these rolls a better rise and texture. You can use regular all purpose flour (1:1) but, the texture and rise of your rolls will not be the same as with the bread flour.

- Since we are using warm milk rather than sugar to assist the blooming of the yeast, your milk will need to be at about 105-110โ .
- It is important that your yeast is fresh yeast and that you are using Instant Dry Yeast rather than another kind of yeast
- These rolls use yeast for leavening which means that you will need to allow the dough time to rise.
- I like to use a dough hook and let my mixer do the kneading for me. You can however, knead the dough by hand.
- I like to use a clean kitchen towel to lightly cover my dough while it rises. Also, I put the bowl in a warms spot where it will not be bothered (on top of my refrigerator) when rising.
- It is important that your rolls are the same size when you divide the dough. I like to cut the dough in half and then cut each of the halves in half until I have 12 equally sized rolls.
How to make No Added Sugar Pumpkin Rolls
Prep Time: 15 minutes .
Rise Time: 90+30 minutes.
Bake Time: 30 minutes .
Servings: 12 rolls .
- In a large mixing bowl, place your warm milk, yeast, brown sugar alternative, flour, pumpkin pie spice, pumpkin puree, softened butter and egg to the bowl of a stand mixer, in order as written.
- Outfit your mixer with a dough hook and knead the dough on low for five to six minutes until is soft, somewhat sticky, and it can pull away from the sides of the bowl.
- Cover the bowl and place it in a warm spot. It should take about 90 minutes for your dough to double in size. Meanwhile, you can line a 9 x 13 inch baking dish with parchment paper.
- Uncover the dough and then punch it down once or twice (to release excess air) image 2. Then divide the 12 equal portions and roughly roll each portion into balls.
- Place the balls of dough into your prepared baking dish and cover the dough again allowing it to rise until doubled (about a half hour image 3).
- When you are ready to bake your rolls, preheat your oven to 350. You can top the rolls with pumpkin seeds and then place the baking dish in the center of your oven.
- Bake the rolls until the begin to turn golden brown (25-30 minutes).
- Take the baking pan out of the oven and brush the rolls with your melted butter while they are still warm. Then allow the rolls to cool in the pan for about 10 minutes before serving.
Expert Tip๐ The rolls will sound hollow when lightly tapped once they are baked through. If they appear to be browning, while baking, too quickly your can lightly tent them with foil.
