What is No Churn Ice Cream?
'Churn' refers to how dairy products, such as milk or cream, are agitated in order to take on another form. For example, cream can be churned in order for the fat to separate from the liquid in order for it to become butter.
When it comes to ice cream, 'churning' is like whipping the dairy ingredients in order introduce air. The result is a creamy and cold treat. These days a machine, such as an ice cream machine, will do the churning for you.
'No churn ice cream' usually means that an ice cream machine was not used to introduce the air into the dairy ingredients. Instead, the ingredients have been whipped using a mixer.
In this recipe for 'no churn' ice cream , we use a mixer to whip the heavy whipping cream until soft peaks form. This process is how we air is introduced into our ice cream.

Sugar free condensed milk is used in this recipe. You can make your own sugar free condensed milk or an alternative such as half and half or unsweetened coconut milk.

- For a deeper coffee flavor, try adding a teaspoon or so of unsweetened cocoa powder. Another option is to add up to a teaspoon of coffee extract to your ice cream for a more 'coffee' taste.
- Espresso coffee is actually added to this ice cream recipe. You can easily substitute the coffee flavor of your choice or even a decaf coffee (the resulting ice cream flavor may vary as a result).

This is a simple no churn ice cream recipe that has no added sugar or eggs added to it.
To make this recipe we will first whip up the heavy whipping cream until firm and then we will add in the remaining ingredients before freezing the mixture.
How to serve No Churn Pumpkin Spice Latte Ice Cream.
- Serve this ice cream alone in cup or in a Sugar Free Waffle Cone.
- Top this ice cream with Sugar Free Whipped Cream and sugar free caramel sauce.
- Blend this ice cream with a bit of unsweetened almond milk to make a shake.
- Place a bit of softened ice cream between two sugar free cookies to make an ice cream sandwich.
Ingredients needed to make Sugar Free Pumpkin Spice Latte Ice Cream
- Heavy Whipping Cream. Your heavy whipping cream should be just out of the refrigerator for best results.
- Unsweetened Condensed Milk. If you cannot find this, here is a recipe for sugar free condensed milk or you can use an alternative such as half and half or unsweetened coconut milk.
- Vanilla Extract. 'Pure Vanilla Extract' is recommended for best flavor results.
- Pumpkin Puree. Use pumpkin puree that has no added sugar or other ingredients in it.
- Nutmeg and Pumpkin Pie Spice. These are the spices added for flavor.
- Espresso. Use a cooled brewed espresso or instant espresso that has been dissolved in cold water.
- Optional- sugar alternative for flavor balance as desired, toppings such as whipped topping.

How to make Sugar Free Pumpkin Spice Latte Ice Cream.
Prep Time: 15 minutes.
Chill Time: 6 hours.

- In a mixing bowl that has been chilled, beat the heavy whipping cream until stiff peaks form (about four to five minutes). The stiff peaks should be able to stand on their own.
- Next, in a new large mixing bowl, beat together the the remaining ingredients (unsweetened condensed milk, vanilla extract, pumpkin puree, and spices) until combined. Then fold in the heaving whipping cream from the first mixing bowl until combined.
- Transfer the ice cream to a loaf pan or an ice cream maker. To make this recipe in an ice cream maker simply follow the manufacturer's directions for doing so.
- Cover the loaf pan with plastic wrap or foil and then place the loaf pan in your freezer to set. It should take between six and eight hours for you ice cream to fully set.
Expert Tip 👉 As this ice cream gets colder, it will darken in color. Also, stirring the ice cream while it is freezing can help prevent ice crystals from forming. You can do this up to every hour until the ice cream has fully set.
