- Cook Time: 20 minutes
- Start by preheating your oven to 325 and prepping a baking sheet (or two) for nonstick. I like to use parchment paper for a recipe such as this one.
- Place the cake mix along with the pumpkin pie spice in a large mixing bowl. Use a whisk to mix the ingredients and to break up any lumps that may be present. Then add in the pumpkin puree and vanilla extract to the bowl and mix until just combined.
- Use a medium cookie scoop to scoop out the cookies and then place them on to the baking sheet(s). Place the cookies about two inches apart from one another and do not flatten them.
- Bake the cookies for 18 to 20 minutes or until the cookies appear to be baked through. They will bounce back when you carefully and lightly touch them on top. Then allow the cookies to sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.
- To make the frosting, simply combine together the ingredients until creamy (you may need to beat the ingredients for a few minutes to get there). My cookies have additional pumpkin pie spice sprinkled on top 😉.
