Sugar Free Frosted Pupcakes

Ingredients

For the frosting

  • cup Peanut Butter --- creamy no added sugar that does not have xylitol added to it.
  • ½ cup Plain Greek Yogurt.

Instructions

  • Prepare. Preheat your oven to 375 and prep your cupcake pan for nonstick. Use a pet friendly nonstick (paper liners should be removed before serving).
  • Dry Ingredients. In a medium bowl, use a whisk to combine together the oat flour and oats.
  • Wet Ingredients. Use a mixing bowl to combine together the remaining ingredients (peanut butter, mashed banana, coconut oil, and eggs).
  • Combine. Add the dry ingredients from the first bowl to the wet ingredients in the second bowl and mix until combined.
  • Bake. Use a cookie scoop or spoon to scoop the batter into your cupcake pan, filling each hole about three fourths full. Then bake your cupcakes for 12-15 minutes or until the edges begin to brown.
  • Cool. Allow the pupcakes to sit in the pan for five minutes before transferring to a cooling rack to fully cool. You can use a butter knife to help lift the pupcakes from the pan.
  • Icing. In a small bowl combine together the frosting until combine. You can use a plastic zip top bag with a cut corner to top the pupcakes (or the method of your choice) just before serving .
