Ingredients

Instructions

  • Start by lining a rimmed baking sheet with parchment paper that hangs over the edges of the sheet.
  • Use a whisk to mix your Greek yogurt until it is smooth and well blended. You can alternatively use a blender or a mixer to do this.
Then transfer the yogurt to the lined baking sheet, spreading it out as evenly as possible using a rubber spatula.
  • Next, evenly distribute your fruit over the yogurt.
Start with the strawberries, leaving room between them, and then fill in the empty spots with the kiwi.
Sprinkle the shredded coconut over the ingredients and then cover with plastic wrap before transferring the baking sheet to your freezer to set.
It should take about four hours for the bark to fully set.
  • When it has set, simply use the hanging parchment paper to lift the bark from baking sheet and then break or cut the bark into pieces.
  • Store any leftovers in an airtight container in your freezer.
