Ingredients

Instructions

  • Preheat your oven to 325 and prep a baking sheet for nonstick.
If you will be refrigerating your dough, you do not need to preheat the oven until you are ready to bake the cookies.
  • In a mixing bowl, cream together the butter with the sugar free powdered sugar until light and fluffy. Then gently mix in the vanilla extract.
  • Gradually add the almond flour to the mixing bowl and mix the ingredients until the dough comes together.
You can either form the dough into a ball and refrigerate it or you can continue with the instructions at this point.
  • To roll out the dough, place it between two pieces of parchment paper and then use a rolling pin to roll it out.
Then use a cookie cutter to cut out the cookies and transfer them to the prepared baking sheet.
  • Bake the shortbread cookies for 10-12 minutes or until the edges begin to turn golden brown. Then let the cookies sit on the baking sheet for three to five minutes before transferring them to a cooling rack to fully cool.
  • To assemble the cookies, spread about two teaspoons of the hazelnut spread on the inside of half of the cookies. Then place the inside of the remaining cookies over the spread to make the sandwich cookies.
