How to make Sugar Free Hazelnut Chocolate Sandwich Cookies
- To make the cookies, preheat your oven to 325 and prep a baking sheet for nonstick. I like to use parchment paper of a baking mat for a recipe like this one. If you will be refrigerating your dough, you do not need to preheat the oven until you are ready to bake the cookies.
- In a mixing bowl, cream together the butter with the sugar free powdered sugar until light and fluffy. Then gently mix in the vanilla extract.
- Gradually add the almond flour to the mixing bowl and mix the ingredients until the dough comes together. The dough may appear to be a bit crumbly but, that is okay if it is able to hold together.
- You can either form the dough into a ball and refrigerate it or you can continue with the instructions at this point.
- To roll out the dough, place it between two pieces of parchment paper and then use a rolling pin to roll it out. Then use a cookie cutter to cut out the cookies and transfer them to the prepared baking sheet. Using a cookie cutter will keep the cookies at a uniform size which is preferred in a sandwich cookie.
- Bake the shortbread cookies for 10-12 minutes or until the edges begin to turn golden brown. Then let the cookies sit on the baking sheet for three to five minutes before transferring them to a cooling rack to fully cool.
- To assemble the cookies, spread about two teaspoons of the hazelnut spread on the inside of half of the cookies. Then place the inside of the remaining cookies over the spread to make the sandwich cookies. Alternatively, you can use a piping bag or zip top bag with a cut corner to apply the filling to the insides of half of the cookies before topping them.
Expert Tip👉 When applying the filling to the cookies, apply to filling to about a quarter inch of the edges of the cookies. This will help to prevent the filling from spilling out of the cookie sandwiches. Also, my cookies have additional sugar free powdered sugar dusted on top for serving.
