Sugar Free Kitchen Sink Cookies

Instructions

  • Preheat your oven to 325 and prep your baking sheet(s) for nonstick.
  • In a medium bowl, use a whisk to combine together the flour and the baking soda.
  • Next, in a large mixing bowl, beat together the butter and sugar alternatives (both kinds) until creamy.
  • Scrape down the sides of the large mixing bowl and stir in the eggs and vanilla extract.
  • Add the dry ingredients from the first (medium) bowl to the ingredients in the large mixing bowl and mix until just combined.
    Use a rubber spatula to fold in the add-in ingredients.
  • To scoop out the cookie dough, use a large cookie scoop to scoop out the cookies and place the cookie on to the prepared baking sheet about two and a half to three inches apart.
  • Bake the cookies for 12-15 minutes or until the edges are golden brown. Then carefully tap the baking sheet on the counter to sink the cookies and run a large round cookie cutter around the edge to shape the cookies back into circles.
  • Carefully return the cookies back to the oven for an additional three to four minutes, or until they are set around the edges and golden brown.
  • After taking the cookies out of the oven, allow them to sit on the baking sheet to fully cool before removing them. You can sprinkle the cookies with thick salt such as Kosher sea salt at this time.
