Sugar Free Lemon Lime Butter Cookies

  • Preheat your oven to 325 and prepare two baking sheets for nonstick.
  • In a medium sized mixing bowl, use a whisk to combine together the flour, baking soda, and the lemon and lime zests.
  • Next, in a large mixing bowl, beat together the butter and the sugar alternative until creamy. Then mix in the egg, vanilla extract and juices (lemon and lime).
  • Add the flour mixture from the medium bowl and mix until just combined.
  • To form the cookies, use a cookie scoop to scoop out the cookies and then roll the cookies into ball.
  • Bake the cookies for 10-12 minutes, or until the edges start to turn golden brown.
    After taking the cookies out of the oven let them cool on the baking sheets for three minutes to set before transferring them to a cooling rack.
