Ingredients needed to make Sugar Free Lemon Lime Butter Cookies.
- Flour. All purpose flour was used to make my cookies. I have not tried an alternative flour to make these cookies with.
- Baking Soda. Added for leavening the cookies.
- Lemon Zest and Lime Zest. Use freshly zested zest for best results with the flavor of these cookies.
- Butter. Your butter should be softened to room temperature.
- Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with, for best results.
- Egg. The egg should also be at room temperature.
- Vanilla Extract. Added for a nice flavor balance.
- Lemon Juice and Lime Juice. Use fresh juice for optimal flavor and to make sure that there is no added sugar in the cookies.
- Optional toppings- Sugar free granulated sugar, sugar free powdered sugar, Sugar Free Glaze or Sugar Free Buttercream Icing.
How to make Sugar Free Lemon Lime Butter Cookies
Servings : 30 Cookies.
Prep time: 5 minutes.
Cook time: 12 minutes.
- Preheat your oven to 325 and prepare two baking sheets for nonstick. I like to use parchment paper for a recipe such as this one.
- In a medium sized mixing bowl, use a whisk to combine together the flour, baking soda, and the lemon and lime zests.
- Next, in a large mixing bowl, beat together the butter and the sugar alternative until creamy. Then mix in the egg, vanilla extract and juices (lemon and lime).
- Add the flour mixture from the medium bowl and mix until just combined.
- To form the cookies, use a cookie scoop to scoop out the cookies and then roll the cookies into ball. If you are topping your cookie with granulated sugar alternative, your can roll the cookie dough ball through the sugar alternative (in a shallow bowl).
- Bake the cookies for 10-12 minutes, or until the edges start to turn golden brown.
- After taking the cookies out of the oven let them cool on the baking sheets for three minutes to set before transferring them to a cooling rack.
Expert Tip 👉 To prevent excessive spread while baking, refrigerate the cookie dough for about 20 minutes before baking the cookies.
