What makes Ombre Layered Cake so good?

An 'ombre' layered cake is really more about the different colors in each layer than the flavors in the cake itself as the colorful layers make for an impressive presentation.
I like that this made from scratch cake has a thin layer of the sugar free berry frosting holding the layers together.

To make this recipe you will need four eight inch round cake pans. You can find eight inch cake pans here.
Ingredients needed to make Ombre Layered Cake
- Flour. All purpose flour was used to make my cake.
- Baking Powder. Added for leavening.
- Salt. You can omit the salt if you are using salted butter.
- Butter. Your butter should be softened to room temperature.
- Oil. You should use a neutral oil such as vegetable oil.
- Granulated Sugar Alternative. However, it is important that you use a sugar alternative that measures like sugar and that can also be baked with as well.
- Eggs. Your eggs should be at room temperature.
- Vanilla Extract. This is added to your cake for flavor.
- Milk. However, I suggest that you use whole milk as the milk has an effect on the moisture in this cake.
- Food coloring. A gel food coloring works best with cakes. Use the color of your choice.

Ingredients needed to make Berry Buttercream Frosting
- Berries. My frosting was made with strawberries, blackberries, and raspberries. However, as long as the total amount of berries you use is one cup, you can use any berry(ies) of your choice.
- Butter. Your butter should be softened to room temperature in order for it to blend with the other ingredients.
- Vanilla Extract. Added for flavor. However, please note that we are using a good amount of vanilla extract for this cake.
- Sugar Free Powdered Sugar. Granulated sugar will not work in this recipe.
- Berries and garnishes of your choice.
How to make Sugar Free Ombre Layered Cake
Cakes.
- Preheat your oven to 325 and double prep four cake pans for nonstick.
- In a medium mixing bowl, use a whisk to combine together the flour, baking powder, and salt.
- Next, in a large mixing bowl, beat together the the butter, oil, and sugar alternative until smooth. Then you can add the eggs and vanilla extract and mix your batter until completely combined. However, do not over mix.
- Gently stir in half of the dry mixture from the first bowl to the large mixing bowl. Then add half of the milk. You can now repeat this step again with the remaining ingredients. Also, make sure that you mix your cake batter until it is just combined.
- Divide the batter as evenly as possible into four different bowls. In the first bowl add two to four drops of the food coloring. Then add the food coloring in increasing amounts in each of the remaining bowls, so they are incrementally more saturated with color.
- Next, transfer each of the bowls of batter into its own prepped cake pan.
- Bake the cake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool before removing them from the pans.
How to make sugar free buttercream frosting with berries.
- Puree the berries in a blender or food processor until fully pureed.
- In a medium saucepan on medium heat, simmer the ingredients for five minutes, stirring as it simmers. Then you can remove the saucepan from the heat and allow the ingredients to fully cool.
- Next, in a large mixing bowl, beat together the butter and vanilla extract until smooth and creamy. Then gradually add the sugar free powdered sugar until completely combined.
- Add your berry sauce a tablespoon at a time until you reach your desired flavor and color is reached.
How to assemble your ombre layered cake.
- Once the cakes have fully cooled, you can use a serrated knife to level the cakes as needed to make a flat surface. However, you should be careful to cut the cake evenly when you do this step.
- Starting with the most saturated layer on bottom and the least saturated layer on top, layer the cakes using a thin layer of buttercream between each cake layer using a large icing spatula .
- Next, spread a thin even layer of buttercream on top of and around the assembled cake to create a crumb coat. You can use your icing spatula to do this step.
- You can now place the cake in your freezer for at least 15 minutes to set the crumb coat.
- Lastly, you can use the remaining frosting to frost the entire cake (going over the crumb coat) and then you can garnish with fresh berries.
- Slice, and enjoy your cake!
Expert Tip ๐ You can make the cake layers ahead of time and refrigerate or freeze them until you are ready to assemble the cake.

Tips for making the best ombre cake.
This is one of those recipes that I like to double prep the pans for. For example, I will first grease the cake pan and then dust it with a bit of flour.

- Since this is a cake recipe, using fresh ingredients is essential to its success. This includes using fresh dry ingredients as well as dairy ingredients.
- Easy cheat, skip the homemade cake and use a mix instead. You can find sugar free yellow cake mix here.
- My cake was made with various amounts of food coloring in each layer. However, you can alternatively use a different color for each of the layers in your cake.
- Also, my cake was made with pink food coloring and the frosting was made with blueberries, blackberries, and raspberries. However, you can feel free to use the food coloring of your choice as well as the berries of your choice for you cake.
How to store frosted ombre cake.
This cake should be stored in an airtight container.
If properly stored, your cake should keep for about four days refrigerated and up to three months frozen.
