Prepare your baking pan with parchment paper that overhangs the sides of the pan.
In a large microwave safe bowl, combine together the white chocolate chips, unsweetened condensed milk, and butter. Microwave the ingredients, stopping to stir every 30 seconds, until the ingredients have melted. Be sure to stir well each time, until the chocolate chips and butter have melted, and the mixture is smooth.
Next, stir in the the strawberry extract. Then use a rubber spatula to fold in half of the dried strawberries.
Lastly, blend in enough food coloring needed to get a pink color.
Transfer the ingredients to the prepared baking pan. Sprinkle over the remaining freeze dried strawberries over the fudge.
Place your fudge into the refrigerator to set. It should take at least 4 hours to set but, overnight is preferable.
To slice the fudge, first use the parchment paper to lift if from the baking pan and then place the parchment with the fudge on to a flat surface, such as a cutting board, to cut into pieces.
