Crust

  • Preheat your oven to 350 and prep your baking dish for non-stick, parchment works well in this recipe.
  • Combine together the softened butter, flour, and sugar alternative in a medium bowl. Mix the ingredients until a dough-like texture forms. Then transfer the crust dough to your prepared baking dish and press it evenly into place.
  • Bake the crust for 15-20 minutes or until it starts to brown. Then remove the crust and allow it cool while you prepare the filling layer.

Filling

  • In a blender, blend together the strawberries, lemon juice, sugar alternative, flour, and lemon zest until smooth. Then add your eggs to the blender and pulse the ingredients until blended.
  • Pour the blended ingredients over the crust using a rubber spatula or the back of a spoon as needed to help guide the ingredients evenly.
  • Return the bars to your oven and bake until the center appears set and the edges of begin to brown.
  • Let the bars fully cool in the baking dish before removing them from the baking dish for slicing.
