Sugar Free Sugar Cookie Bars

  • Preheat your oven to 375 and prep you baking pan or sheet. I like to use parchment paper for a recipe such as this one.
  • Combine together the dry ingredients ( flour and baking soda) in a medium bowl using a whisk. Set this bowl aside.
  • In a mixing bowl beat together the butter and alternative until creamy (about 2 minutes) using a paddle attachment. Then add in the eggs and vanilla extract and mix until combined.
  • Add the dry ingredients to the mixing bowl and mix until the ingredients are just combined.
  • Transfer the ingredients to your prepared pan or sheet.
  • Bake for 12-15 minutes or until the edges are golden brown (baking time will vary depending on the size pan used) and a toothpick comes out clean.
  • Allow the bars to cool to room temperature before frosting (depending on the pan you used, this can take up to an hour). Frost and sprinkle your cookie bars before slicing and serving.
