Sugar Free Yule Log Cake (Bûche De Noël)

  • Preheat your oven to 350.
    To prepare your jelly roll pan, first spray the pan with a bit of nonstick. Over the nonstick spray, lay a sheet of parchment paper in the pan and then spray the parchment paper with additional nonstick spray.
  • In a large mixing bowl, beat the eggs on high speed until the eggs have thickened and turned yellow in color.
  • Add the cake mix, oil, and water to the mixing bowl and mix on low until smooth and blended (about three to four minutes), stopping to scrape down the sides of the bowl as needed.
  • Evenly spread the cake batter over the prepared pan and bake until the cake springs back in the center (14-16 minutes).
    While the cake is baking prepare a clean kitchen/tea towel to flip the warm cake over on to. Dust the towel with sugar free powdered sugar.
  • Just after you take the cake out of the oven, carefully flip it over on to the kitchen towel and remove the parchment paper that it was baked on.
    Then immediatly roll the cake and towel (shorter side to shorter side).
    Allow the cake to cool on a cooling rack for a half hour.
  • To make the ganache, place the chocolate chips in a mixing bowl. Then in a microwave safe bowl, heat the heavy cream until it begins to bubble and steam, stopping to stir every 20 seconds.
    Carefully pour the heated heavy cream over the chocolate chips and allow the chip to melt (four to five minutes). Then use a whisk or a fork to blend the ingredients.
  • Carefully unroll the cooled cake and evenly spread the ganache over the cake to about a quarter inches from the edges. Then reroll the cake and frost as desired.
  • Frost or add additional ganache over the rolled up cake.
