- Eggs. Your eggs should be at room temperature for better blending.
- Sugar Free Cake Mix. You can use a low carbohydrate cake mix to make a low carb version of this cake.
- Canola Oil. Added for moisture.
- Water. A small amount is added for blending.
- Sugar Free Powdered Sugar. A small amount is used for dusting purposes.
- Sugar Free Chocolate Ganache and Sugar Free Chocolate Frosting. Used for the filling and topping. You can use one for both or the ganache for the filling and the frosting on top of the rolled cake.

How to make Sugar Free Yule Log Cake (Bûche De Noël).
- Preheat your oven to 350. To prepare your jelly roll pan, first spray the pan with a bit of nonstick spray. Over the nonstick spray, lay a sheet of parchment paper in the pan and then spray the parchment paper with additional nonstick spray.
- In a large mixing bowl, beat the eggs on high speed until the eggs have thickened and turned yellow in color (about five to six minutes).
- Add the cake mix, oil, and water to the mixing bowl and mix on low until the batter is smooth and blended (about three to four minutes), stopping to scrape down the sides of the bowl as needed.
- Evenly spread the cake batter over the prepared pan and bake until the cake springs back in the center (14-16 minutes).
- While the cake is baking prepare a clean kitchen/tea towel that will be used to flip the warm cake over on to immediately after take it from the oven . Dust the towel with sugar free powdered sugar.
- Just after you take the cake out of the oven, carefully flip it over on to the dusted kitchen towel and remove the parchment paper that it was baked on. Then immediatly roll the cake using the towel (shorter side to shorter side).
- Allow the rolled up cake to cool on a cooling rack for a half hour.
- To make the ganache, place the chocolate chips in a mixing bowl. Then in a microwave safe bowl, heat the heavy cream until it begins to bubble and steam, stopping to stir every 20 seconds. Carefully pour the heated heavy cream over the chocolate chips and allow the chips to melt (four to five minutes). Then use a whisk or a fork to blend the ingredients. Double the recipe if you will be using additional ganache as the covering for this cake instead of frosting.
- Carefully unroll the cooled cake and evenly spread the ganache over the cake to about a quarter inches from the edges. Then reroll the cake and top with ganache or frost as desired. You can use prepared sugar free frosting or make your own sugar free chocolate frosting using this recipe.
- To make a log shaped like mine, simply cut a small part of the log off and place it on the side of the larger piece before frosting.
Expert Tip👉 You can carefully run a butter knife around the edges of the jelly roll pan to loosen up the cake before flipping it over onto the towel. Also, to make the log design, simple run a fork randomly over the topping before it is set in place.
