    I am sure that there is a more difficult way to make pasta using low carbohydrate or keto flour.
    However, sometimes you need a hack or an easier way to do things.
     

    There are certainly low carb and keto pastas that you can buy.
    I often dabble in the low carb pastas myself. But, I will say that not all of these pastas are the best, hence some are better than others and a few may also be somewhat of a pasta compromise in the end. Personally, I'm just grateful for pasta options ๐Ÿ™‚ sometimes.
     

    I am posting this easy low carb keto pasta recipe in response to a reader request.

    Last week I posted a recipe for Easy Low Carb Lo Mein. The recipe was 'easy' because I suggested using low carb pasta that was already made. Also, it was Lo Mein because of the way that pasta was prepared with the ingredients.

    However, I can easily understand why folks would want to make their own pasta to prepare as Lo Mein.
    Personally, I like the feeling of conquering a do-it-myself goal such as making my own pasta. Think of the bragging rights on that achievement!
     

    I am here to tell you that making homemade low carb and keto pasta is easy.

    By easy, I mean almost ridiculously easy. There are only two ingredients in this recipe for pasta!

    This pasta recipe is based upon what some folks like to refer to as 'fathead' dough.
    Yes, I had to look that one up too even though I have been friendly with the low carbohydrate world for um... many.. years. Fathead dough, in case you did not know, is low carb dough that is made with mozzarella cheese instead of flour.
     

    I should also mention that this pasta recipe is also gluten free.

    Since we are not using regular flour, which is the basis of regular pasta, we do not have gluten going into the pasta.
    Also, because we do not have gluten going into the pasta, we need something to hold it all together.

    That is where mozzarella cheese comes in.
    You probably know what happen when mozzarella cheese gets baked or cooked. It gets nice and gooey, kind of like pasta looking too. (YUM!)
     

    I will say that this pasta is a pretty good substitute for the real stuff when it comes to making some of those great pasta dishes.

    However, there are still a few tidbits about making the pasta that I should share with you.
    First off, it is important that you use the store bought shredded mozzarella as it is the perfect consistency, as compared to home shredded mozzarella. Also, this homemade pasta also cooks differently than the flour version so please read the cooking directions before you move on with your delicious meal making.

    As mentioned, it is important that you use the store bought shredded mozzarella as it is the perfect consistency, as compared to home shredded mozzarella. Also, this homemade pasta also cooks differently than the flour version so please read the cooking directions before you move on with your delicious meal making.
     

    I am sure that there is a more difficult way to make pasta using low carbohydrate or keto flour.
    However, sometimes you need a hack or an easier way to do things and as far as low carb keto pasta goes, this is that hack. Also, this is a gluten free recipe as well.

    What you will need to make this low in carbohydrate pasta.

     

    • Store Bought Shredded Mozzarella- 2 cups. I have no idea if any other cheese would work in this recipe. Mozzarella just seems like the perfect gooey/salty/cheesy consistency for this recipe.
    • Egg Yolks-2. Slightly stir these.

    How to make this low carb keto pasta.

     

    • Start by prepping a flat surface with parchment paper and then microwaving your mozzarella cheese in a microwave safe bowl. I suggest lightly spraying the bowl with a bit of nonstick before heating the cheese. Also, stop the microwave every 60 seconds to gently stir with a nonstick sprayed fork. This should take about 2-3 minutes total for the melting process.
    • Allow the melted cheese to sit for 45-60 seconds before you move on.
    • Next, gently fold the egg yolks into the melted cheese. A spatula should work well here. When the mixture begins to form a ball, you are ready to move on to the pasta making potion.
    • Transfer that ball that you just made to the parchment paper that you prepared in the first step. Then roll out the ball flat. Tips: divide the ball in half and work with half at a time to make it easier. Also, if the dough seems too sticky you can refrigerate it for a few minutes, spray your rolling pin with nonstick or oil, and/or use another piece of parchment paper over the dough while you roll it out. Then cut the dough into strips or your desired shapes.
    • We need to allow the pasta to dry so I suggest allowing the pasta to dry overnight if possible in the refrigerator.
    • To cook your pasta- boil the water well and do not add salt to it. Then (quickly!) drop your pasta into the boiling water and then remove it. The pasta should not be in the water for more than 45 seconds- 30 seconds is optimal. Immediately rinse the pasta under cold water.
