Easy Low Carb Lo Mein
I must admit that sometimes I too am a fan of the term "easy".
This recipe is no exception of my personal fandom of words.
However, I must also admit that "easy" can also mean tasty.
When it comes to this Low Carb Lo Mein recipe, this no exception.
Indeed, this recipe is both "easy" and tasty and, thank goodness for that.
Contrary to what some folks believe, there is a difference between Lo Mein and Chow Mein.
Yes, I was a bit confused myself because they appear to many of us to be the same thing- both have "Mein" in their titles right? Also, both dishes features similar noodles.
But, there is a bit of a difference between Lo Mein and Chow Mein in the method in which they are prepared.
Chow Mein features a noodle that has been fried, often stir fried. However, Lo Mein, such as in this recipe, are prepared in a liquid such as water.
Lo Mein can often be considered to be a healthier or lower in calorie noodle if prepared to be so.
This is especially true since Lo Mein is not fried like Chow Mein is. But, I will also mention that Lo Mein is often prepared with shrimp, vegetables, or even tofu.
You could certainly add shrimp to this Lo Mein recipe.
I would probably simply prepare the Lo Mein and prepare the shrimp and the combine them together. This is an easy method to make a great tasting shrimp, or scallops or something else, dish.
Most home chefs will use spaghetti or a similar egg and flour noodle to make their Lo Mein.
However, this is a low carbohydrate recipe. As a result, we will use a low carb noodle rather than a regular pasta noodle, which we all know is laden with carbs.
You can find low carb spaghetti and similar noodles online.
I suggest looking for the lowest in 'net carbs' as it is often the fiber that saves us when it comes to watching the carbs in pasta. There seem to be new versions of low carb pasta that you can buy online popping up every time that I look to buy some.
Another option is to make your own noodles that are low in carbohydrates.

The noodle recipe that I referenced above is a simple recipe that requires only two ingredients.
I think that it would probably work fine when prepared as a Low Carb Lo Mein. But, I will point out that you should probably follow the directions for cooking that noodle rather than a normal pasta as there is no flour in it.
There are a few more ingredients that you will need which you may not already have in your kitchen.
Oyster Sauce and sesame oil can easily be found online. Look for the lowest in carbs if possible when you select yours.

What you will need to make this Easy Low Carb Lo Mein
- Low Carb Spaghetti (or similar noodles) . Please note that your choice in noodle will affect the net carbs in this recipe.
- Bullion Soup - 1 ½ cups soup prepared. Chicken bullion soup is preferred in this recipe.
- Oyster Sauce- 2 tablespoons.
- Sesame Oil - 1 teaspoon.
- Vegetable Oil- 2 tablespoons.
- Minced Garlic - 1 ½ teaspoons or one clove.
- Minced Ginger- 1 tablespoon.
- Veggies such as chipped celery, broccoli, mushrooms, and or shredded carrots- 1 cup total.
How to make Easy Low Carb Lo Mein
- Cook your pasta according to the instructions on the package. Drain the pasta and set it aside to cool while you work.
- In a small bowl, whisk together the bullion, oyster sauce and sesame oil. Set this aside as well.
- In a wok or skillet on high heat, add the vegetable oil. When the oil is warm, add the the garlic and ginger and saute for about about two minutes until the garlic begins to soften. Then add the vegetables and cook for 6-7 minutes or until the vegetables begin to get tender. You will need to stir the vegetables as they cook to prevent burning.
- Toss in the mixture from the small bowl and the cooked pasta and continue to stir and cook your Lo Mein until the ingredients are all warm and mixed well.
- Serve with cooked shrimp or other food if desired.

- 1 ½ Cups Chicken Bullion Soup or other flavor
- 2 tbsp Oyster Sauce
- 1 tsp Sesame Oil
- 2 tbsp Vegetable Oil
- 1 ½ tsp Minced Garlic
- 1 tbsp Minced Ginger
- cup Broccoli chopped, can use other vegetables such as chipped celery, broccoli, mushrooms, and or shredded carrots- 1 cup total
