Like that recipe, this one also features chocolate chips in it.
This recipe is based upon the cookie recipe that folks make using Jello Pudding.
If you have ever tried a cookie that has Jello Pudding in it, then you would probably agree that it offers a great and fun baking hack. Not only do you get the color from the pudding, you also get the taste that comes with it.
Sugar Free Jello Puddingworks great in my Sugar Free Pudding and Cream Cheese Frosting recipe because it offer the taste and the color.
However, it also contains aspartame as a sweetener. If you are familiar with my sugar free baking guide, then you know that this artificial sweetener does not bake well due to its chemical composition.
However, there is a way to get around the sweetener issue and make a sugar free version of a Jello Pudding inspired cookie.
Like with the regular sugared cookie version, we will get that fun color with our sugar free cookies.
Also, we will get a fun taste with our cookies as well.
For this recipe, you will need a sugar free pudding product that is sweetened without aspartame.

For example,here is a sugar free pudding that has been sweetened with stevia and another sugar free pudding that has been sweetened with Splenda.
When choosing a sugar free pudding product, please read the label for best results.

What you will need to make this recipe for Sugar Free Butterscotch Pudding Chocolate Chip Cookies.
- All Purpose Flour- 2 ¼ cups. To make this low carb, use a low carb all purpose flour.
Also, to make this keto use a keto all purpose flour.
Lastly, to make this recipe gluten free, use an all purpose gluten free flour.
Also, if you are using Almond flour, please add an additional egg to the batter to aid in the binding process. I suggest anyone using any of the all purpose flour alternatives check the packaging to see if an additional egg or other binder for gluten free baking is needed as well. - Baking Soda- 1 teaspoon.
- Butter- 17 tablespoons. That is two sticks plus on tablespoon. You can find vegan butter alternatives here.
- Sugar Alternative- ¾ cup equivalent to sugar. Please use a granular sugar alternative that measures 1:1 with sugar for best results.
- Sugar Free Butterscotch Pudding- (1) 4- 4 ½ serving packet. The size will vary depending on the product.
- Vanilla Extract-1 teaspoon.
- Eggs- 2. You can find egg alternatives here.
- Sugar Free Chocolate Chips- 1 cup.
How to make recipe for Sugar Free Butterscotch Pudding Chocolate Chip Cookies.
- Preheat your oven to 350. Prep your cookie sheets with Parchment Paper .
- In a medium bowl, whisk together the flour and the baking soda. Set this bowl aside.
- Next, in a large mixing bowl,cream together the butter and the sugar alternative.
- For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. Then stir in the pudding, vanilla extract, and the eggs. Lastly, fold in your chocolate chips.
- Bake your cookies for 10-12 minutes or until they begin to brown.
