When you make this recipe in an air fryer it is even better!
This recipe is based upon a grilled eggplant pizza recipe that ran on FoodWinenadLove.com/.
Certainly, that recipe for eggplant pizza is made on a grill. However, sometimes an air fryer can be the way to go, in my opinion.
Recently I mentioned that my air fryer is one of my favorite kitchen gadgets- or whatever you may want to define it as.
When you cook with an air fryer you really can not ruin whatever you put into it. I have a friend who likes to refer to air frying as 'cooking for dummies' because it is so easy to do.
I also mentioned that air fryers have come a long way since I first purchased mine.
When I bought my air fryer it was that basic giant egg shaped air fryerthat I wanted for that rare occasion that I wanted to try cooking potatoes in it. By the way, potatoes are fabulous in the air fryer ๐ .
However, I am currently looking to update my air fryer to the new wave of toaster oven air fryers.
My toaster oven is old, yet, still working fine. I keep it around because it has that 'bagel' setting on it, which the new ones do not seem to have. Getting a toaster oven that is also an air fryer is something that would be seriously useful in this house!

For this recipe, the kind of an air fryer that you use should have little effect on the recipe itself.
However, I have designed this recipe for use with the black egg shaped air fryer that I currently have. If you decide to make your sandwich with the air fryer that is on my shopping list, please keep an eye on your pizzas through the window of it as the finish time may differ from mine.
Getting back to eggplants, they really are a healthy food to eat.
Personally, I was originally drawn to eggplants because of their beautiful purple-ish color.
Yes, eggplants are often on the unusual side when it comes to putting them on the shopping list yet, they are worth taking a chance on in my opinion.
Eggplants are a healthy food to eat and here is why.
One cup of eggplant has about 20 calories in it. However, that same cup of eggplant is a good source of fiber, fat free, and has about two net grams of carbs in it.
Being that this is also a pizza recipe, there are a few other ingredients that you will need for this easy eggplant recipe.
Feel free to sub in ingredients or omit ingredients to suit your needs and diet.
For the sauce in this recipe you can use marinara sauce, pizza sauce, pasta sauce, or simple tomato sauce.
Being that this is a pizza, you will also need cheese for this recipe.
Shredded mozzarella is my first choice of cheese, mostly because I have a lot of it around as I use it often. Other great cheeses that you could use include grated Parmesan cheese, Provolone (usually in slices),, are any great tasting Italian blend of cheeses.
Feel free to use the usual ingredients that you would choose for topping a pizza with.
Italian seasonings and fresh oregano are popular choices for toppings. Also, do not forget about the jarred options such as olives and artichokes.

The recipe for Air Fried Low Carb Eggplant Pizza
As mentioned, for the sauce in this recipe you can use marinara sauce, pizza sauce, pasta sauce, or simple tomato sauce.
Being that this is a pizza, you will also need cheese for this recipe.

Here is what you will need to make this recipe.
For the eggplant, one eggplant is two servings. Prepare the eggplant by slicing it into ยผ-1/3" slices.
Also needed for this pizza recipe are these ingredients.
- Eggplant- 1, sliced into ยฝ-1/3" slices.
- Olive Oil- 2 tablespoons.
- Marinara Sauce- ยฝ cup. Can alternatively use pizza sauce, pasta sauce, or simple tomato sauce.
- Shredded Mozzarella Cheese -ยพ cup. Can alternatively use grated Parmesan cheese, Provolone (usually in slices),, are any great tasting Italian blend of cheeses.
- Optional-
Feel free to use the usual ingredients that you would choose for topping a pizza with.

How to make Air Fried Low Carb Eggplant Pizza
- I like to prep my fryer basket with a bit of nonstick spray before I begin. Preheat your air fryer to 400.
- To prepare your eggplant slices, simply brush them with the olive oil and allow the olive oil to absorb in while your air fryer heats up.
- Place as many slices that can fit at a time into your fryer basket without overlapping them. Air fry the first side of the eggplant for 10 minutes and then then flip over and cook for another three minutes.
- Use a tablespoon to place the sauce on top of the eggplant slices and add your cheese and toppings. Continue to air fry the eggplants for another two to three minutes or until the cheese has melted or the eggplant has begun to brown.
- The air frying time of your eggplant pizza can vary especially depending on the kind of air fryer that you are using adn the width that you have cut your eggplant into. Please keep and eye on your pizzas white they bake.
