I recently had a reader contact me to ask How To Freeze Eggs.
This is a good question as sometimes we have more eggs than we may need or can use by the date that is on the carton.
How To Freeze Eggs.
This is more than a recipe, it is how to make the best use of eggs.
Because as bakers, we know that sometimes, it is hard to use that full dozen eggs when you only needed two for that recipe.
As chickens are laying eggs, we are going to figure out ways to eat them.
Whether you are the foodie using eggs in your recipes or the breakfast eater who loves eggs, those hens will be busy working for us. And as a result of buying all of these eggs, there may be a time when we just have too many eggs around and need to figure out how to use them.
Can you freeze eggs?
Why yes, you can freeze eggs. You just need to do a bit of work in order to do so.
You just cannot put a whole egg into the freezer.
An eggshell does not provide the perfect cover for eggs when it comes to freezing them.
Nor will the results of freezing an egg in its shell be the best as shells were not made for being frozen.
We know that fresh eggs do need to be refrigerated.
I should say that if you want to prolong the life of your fresh eggs then please do refrigerate them.
Leaving your eggs sit out on a kitchen counter, for as little as one week, will most likely hinder their ability to make it to their freshness date with a taste and quality that you would expect from your egg purchase
Here is why you should refrigerate eggs.
The obvious reason for refrigerating your eggs in the carton that they came in is to keep them safe from breaking. When eggs are stored in the refrigerator the atmosphere can more easily be controlled as well.
Here is how to know that your eggs are fresh.
I just mentioned that refrigerating your eggs is one way to maintain their freshness.
Also, keeping the eggs refrigerated in their carton and keeping track of their freshness date are important as well.
Eggs can have a refrigerator freshness for up to five weeks.
That is according to the experts. Here is how to check to see if your eggs have gone bad.
- Obviously, they are way beyond their freshness date. Often they can still be good for a while after their date.
- Smell your eggs in question. If the smell seems off, the egg may not be good any longer
- Never use an egg that has a crack in its shell. Cracks leave openings for bacteria to come in. Also, the air that can enter via the egg shell will affect the quality.
- Also, never use an egg that has a color that is not typical of an egg.
- You should also not use an egg that has an odd consistency that is not normal.
- Older eggs that may have passed your freshness test may still not be the best eggs to use in cakes as they lose some of their abilities in baking.
- Older eggs should be cooked well to kill off any bad bacteria. Experts say that their internal temperate should reach about 160f.
- If worse comes to worse, you can try the old float test. An egg that floats in water is said to not be as fresh as one that sinks. This idea may not always be exact however.
- Adding a bit of vinegar to the boiling water when making the boiled egg recipe below, will help with peeling the shells later on.
Freezing eggs works best with eggs that have not gone bad.
So hopefully, the tips mentioned above will be helpful for you. But, as my mom use to say, if in doubt, throw it out.

How to freeze fresh eggs.
I mentioned above freezing chicken eggs works best when the eggs are fresh.
These fresh eggs should be refrigerated in their packaging as well.
I also mentioned that eggs should not be frozen in their shells.
This is because egg shells are not protective enough to keep the eggs safe when frozen. Also, shells tend to react to temperature changes which can result in a decline in egg quality when frozen.
How to Freeze an Egg in its shell.
Since freezing eggs whole in their shell is not recommended, there is how you can freeze your whole eggs.
- Crack each egg open into a mixing bowl.
- Use a whisk or a fork to gently beat your eggs. Gently beating your eggs will prevent too much air from entering.
- Transfer the whipped eggs to an air tight freezer container.
- Another option is to freeze the eggs in an ice cube tray and cover with plastic wrap. When the eggs have frozen into cubes you can then transfer them to an air tight container or zip top freezer bag.
- Be sure to mark the container or bag with the date.
- Frozen eggs can be good for up to a year.
How to Freeze an Egg white.
- You will need to carefully separate the egg yolk from the white. Use an egg separatorr or similar idea in order to do so.
- I suggest using the ice cube tray method of freezing egg whites. This method will make it easier to use the egg whites in recipes.
- Separate one to two egg whites from the egg at a time into a small bowl.
- Transfer the separated egg white into an individual compartment of the ice cube tray.
- Repeat as needed.
- Cover the tray with plastic wrap.
- When the egg whites have frozen into cubes you can then transfer them to an air tight container or zip top freezer bag.
- Be sure to mark the container or bag with the date.
- Frozen egg whites can be good for up to a year.
How to Freeze an Egg Yolk.
- As with the egg white method above, you will need to carefully separate the egg yolk from the white. Use an egg separatorr or similar idea in order to do so.
- I suggest using the ice cube tray method of freezing egg yolks. This method will make it easier to use the egg yolks in recipes.
- Separate two egg yolks from the egg at a time into a small bowl.
- Use a whisk or a fork to gently beat your eggs yolks. Gently beating your egg yolks will prevent too much air from entering.
- Transfer the separated egg yolks into an individual compartment of the ice cube tray.
- Repeat as needed.
- Cover the tray with plastic wrap.
- When the egg yolks have frozen into cubes you can then transfer them to an air tight container or zip top freezer bag.
- Be sure to mark the container or bag with the date.
- Frozen egg yolks can be good for up to a year.
- Tip: you can season (salt, pepper, etc) the yolks for your needs so that they are ready to go when you need them to be. Also, adding a pinch of sugar when whisking the eggs can help keep maintain the consistency of the yolks.

- 12 Eggs
- 1 tsp Baking Soda
- Water
Instructions
- Start by preparing a large bowl with ice water.
- Next, place the eggs in a large pot. Cover the eggs with cool water and sprinkle in the baking soda.
- Place the pot on high heat. Bring the water with eggs to a boil.
- Once the water boils you can turn off the heat and cover the pot with a lid. See the notes below for timing. Then transfer the eggs to the large bowl that you prepared with ice water.
