Low Carb Air Fried Coconut Shrimp
I am thinking that I could easily add these shrimp to my recipe for Easy Low Carb Shrimp Tacos.
Ironically, shrimp tacos are my new crave and and this recipe is really giving me some great ideas, certainly by digression I suppose 🙂 .
Shrimp is really a good protein choice for many diets, as I have discovered.
While there is protein in shrimp, it is relatively low in calories. I should also mention that shrimp is low in carbohydrates and fat as well.
People often wonder if you can put shrimp in an air fryer.
The answer is yes, you can cook your shrimp in an air fryer. It is actually not difficult to do so as well.
I would also like to point out that air frying your shrimp is a healthier way to prepare it.
This is especially true when it comes to comparing air frying to deep frying. Personally, I think that coconut shrimp tastes better air fried because it does not have all of that extra oil and fat involved in it.
Air frying is really becoming a popular method of cooking and baking food.
Certainly that has a lot to do with how easy and healthy air frying anything can be.
Really, just about anyone can work a basic air fryer such as this one.
However, I recently updated my air fryer to a new one that does more than just air fry.
After mentioning that I was thinking about upgrading, I had a reader who suggested that I check out this air fryer as they had recently purchased it and were extremely happy with it.
I must say that I am indeed really happy with my upgrade.
There are a few ingredients that you will need for this shrimp recipe that you may not have on hand.
Most importantly, you will need a low carb bread crumb alternative. I have a few choices for you to choose from.
There are some great low carb or keto friendly alternative to panko bread crumbs.
Nut crumbs is an alternative that has been rising in popularity lately. I am not a pork eater myself however, there are some folks who sing the praises for pork based (pork rinds etc) alternatives to breadcrumbs.
Here are some tips for air frying your coconut shrimp.
I already mentioned that you will need a low carb bread crumb alternative. I also mentioned some low carb bread crumb alternative choices for you to choose from.
Here are some more air frying tips for you.
- Use unsweetened coconut flakes to keep the sweetness and sugar down in this recipe.
- Run your coconut flakes in a food processor before adding them to the batter if you prefer smaller flakes.
- Check on your shrimp to make sure that they are pink as I have found that air frying times for shrimp can vary especially among different air fryers.
- To prepare your shrimp for this recipe, have them peeled and cleaned (deveined) but, keep the tails on them.
The big question may be what to serve your air fried coconut shrimp with.
I already mentioned my desire to serve these air fried coconut shrimp as shrimp tacos (removing the tails first of course). However, you can find some great low carb, keto friendly, or simply sugar free dipping sauces here.

As mentioned, you will need a low carb bread crumb alternative for this recipe. I have a few choices for you to choose from.
There are some great low carb or keto friendly alternative to panko bread crumbs.

What you will need to make this Low Carb Air Fried Coconut Shrimp
- Shrimp- 1 pound. This is about 21-24 large shrimp. Have your shrimp peeled and deveined, leaving the tails on.
- Low Carb All Purpose Flour- 2 ½ tablespoons. Make this keto friendly by using a keto all purpose flour.
- Seasonings as desired- This can include Italian Seasonings,
Salt,
and/or Pepper. - Eggs- 2 whisked.
- Unsweetened Coconut Flakes- 1 cup. Run your coconut in a food processor if you prefer smaller flakes.
- Low Carb Bread Crumb Alternative- ½ cup.
How to make Low Carb Air Fried Coconut Shrimp
- Preheat your air fryer to 375. I like to lightly spray my basket with nonstick and place a piece of Parchment Paper in the lower area for an easy clean up. Also, clean (devein) and peel your shrimp, leaving the tail on them.
- To make this, we are going to make a dredging station of three shallow bowls. In the first bowl use a fork or a whisk to mix your flour and seasonings. The second bowl is the whisked eggs. Lastly, in the third bowl mix together the coconut flakes and the low carb bread crumbs.
- You may need to make this in batches depending on the size of your air fryer since you want to air fry your shrimp in a single layer in the basket for best results. Start by holding on to the tail of a shrimp and dredging in through the first bowl with the flour and seasonings, taking care to shake of any excess mix. Then dredge your shrimp though the eggs (shaking off excess) and then the coconut and bread crumbs (shaking off excess). Make sure that your shrimp are well covered (pressing the coating in place helps too).
- Air fry for three minutes and flip the shrimp over. Then air fry for another 3-4 minutes or until done. Repeat process as needed to air fry all of your shrimp.

First, I'm glad that you are enjoying the Cuisinart Air Fryer. I am the one who suggested it to you as an alternative.
In your article, you are not showing putting the shrimp in the air-fry basket. When I make my shrimp, I find the air fry basket helps with both sides being crisp without flipping. I regularly use heavy aluminum foil to cover the support tray. Minimal clean up that way.
In terms of your recipe, it's great. I do use the Carbquick "flour" which works well. After going to the doctor and finding out my cholesterol was way too high on the KETO diet, I switched to plant based butters, AND egg-beaters which have no carbs and no cholesterol. Actually much healthier. I also use crumbled (food processor) pecans which again have less than half the carbs of crushed almonds for crunch.
Last, I have been known to put the coated shrimp in the fridge overnight to allow the breading to really set up. Then, when I take them out, a quick dredge through the Carbquick fills in any week areas.
