    I must say that this recipe for Keto Low Carb Coconut Macaroons is an easy one to make.
    I like that it is also tasty recipe as well.

    This recipe is a lot like my recipe for Low Carb Coconut Macaroons.
    However, that recipe is more like a cookie because it is made with flour added to it.
     

    However, like that low carb coconut macaroon recipe, you could easily drizzle some melted Sugar Free Chocolate Chips over these macaroons.

    These macaroons are more friendly to the keto diet as well. For those of you counting carbohydrates, you will be happy to know that this recipe nets out at about one carb per serving.
     

    You may be wondering if coconut is on the keto diet.

    The answer is yes, coconuts are friendly to the keto, as well as the low carb, diet.
    One cup of shredded coconut flakes nets out at around 3.5 carbs (depending on who you ask of course.)

    Please make sure that your shredded coconut flakes are also unsweetened.
    Obviously, if your coconut flakes are sweetened it will affect the nutrition of this recipe. As a result, your macaroons will not turn out to be as keto and low carb friendly

     

    You may be asking what is the difference between a "macaroon" and a "macaron".

    Perhaps you have never thought about it before but, now that I have brought it up, it is worth pondering.
    Well, there is a difference between a "macaroon" and a "macaron".

    What we are making here is a macaroon and it is different from being a macaron.

    Macaroons such as this one, is made with coconut and without flour (although some folks may add flour to theirs).
    But, a macaron is a French cookie that can come in colors and with fillings.

     

    Here are some tips Keto Low Carb Coconut Macaroons

    I already mentioned that you can drizzle some melted Sugar Free Chocolate Chips over these macaroons. This will give your macaroons a nice look as well as a hint of chocolate to them.

    Here are some more helpful tips for making macaroons.

    1. Whipping your egg whites is important to this recipe. They should reach a medium peak stage for this recipe.
    2. Your room temperature should not be too warm or too cool for this recipe as temperature can affect the outcome.
    3. Placing your macaroons in the center of the oven while baking will help keep the bottoms from turning brown too quickly.
    4. Substitute in another flavor extract (such as banana or lemon for example) for your vanilla extract to change up the taste of your macaroons!

     

    I should also mention that you can freeze these macaroons away to eat later.

    This is a great idea if you want to only serve up half the batch or simply want to eat them one at a time.
    To freeze macaroons simply allow them to cool after baking and then place them in a single layer in a covered container.

    The recipe for Keto Low Carb Coconut Macaroons

    Here is what you will need to make this recipe for macaroons.

     

    • Granular Sugar Alternative- ยฝ cup.
      Please use a granular sugar alternative that measures 1:1 with sugar for best results.
    • Vanilla Extract- 1 teaspoon. You can substitute in another flavor extract (such as banana or lemon for example) for your vanilla extract to change up the taste of your macaroons!
    • Unsweetened coconut flakes- 2 cups
    • Egg Whites- 4 at room temperature. I have no idea how egg white substitutes will behave in this recipe however, you are welcome to try them and let me know.

    How to make Keto Low Carb Coconut Macaroons

     

    • Preheat your oven to 300 degrees.
      Prep your cookie sheets with Parchment Paper .
    • In a medium or large mixing bowl mix together the sugar alternative, vanilla extract and unsweetened coconut flakes.
    • Fit your electric mixer with a whisk attachment. Beat the egg whites on a medium speed until medium peaks begin to form. Then transfer the egg whites to the first bowl with the other ingredient in it, folding the egg whites into the other ingredients.
    • Use a scoop or similar sized spoon to drop the batter on to the prepared sheet from the first step.
    • Bake your macaroons for 20-25 minutes oruntil they begin to brown. Allow them to cool before serving.

    • 1 tsp Vanilla Extract
