This chicken recipe is inspired mostly by the ease of making a meal for a crowd rather than a meal for two.

This recipe is especially for the cook who is asking do you need to add liquid to chicken in slow cooker.
Personally, I would suggest adding some kind of liquid as it will help the chicken stay moist.
However, because the purpose of a slow cooker is to cook slow, you do not need a lot of liquid in order to keep the chicken moist.
In the case of this recipe we will make a buffalo sauce that we will slow cook the chicken in.
I have posted a homemade buffalo sauce recipe below that will work in this recipe or, you can cheat and use a bottled version. But, I do remind you that making your own buffalo sauce will allow you to control both the sugar that is added and the heat (I'm not a huge fan of food that is too hot!).
Here is how to prepare chicken for a slow cooker.
I prefer using skinless chicken breast in this recipe.
You will need four chicken breasts which will weigh about two pounds (or up to three at most).
We will cook the chicken breast in a bit of broth and the sauce.
Then we will shred the chicken and return it to the slow cooker.
You should be able to shred the chicken by hand.
Here are some tips for making slow cooker chicken.
I mentioned above that you can use skinless chicken breast in this recipe. You will need about four chicken breasts which will weigh between two and three pounds total.
Here are some more helpful tips for you.
- I love to personalize a slow cooked recipe such as this one with add-ins. Some ideas for add-ins include chopped garlic, meats such as chopped pepperoni or sausage, and chopped or sliced tomatoes.
- There are people in my family who enjoy the taste of buffalo sauce in its true form (hotter the better). I serve anything that I deem to be 'too hot' with ranch dressing. Ranch dressing is the perfect antidote for a hot mouth in my opinon!
- I have not tried this but, I once saw a video of someone doing it (ticktok?). That video showed someone using a sturdy stand mixer that shredded their cooked chicken quickly!
- While I suggest using the white meat from a chicken breast, some folks prefer the dark meat. Feel free to use both light and dark or simply just dark meat if you prefer.

How to Make Low Carb Buffalo Sauce.
In a medium mixing bowl, use a whisk or a fork to mix together; hot sauce (ยฝ-2/3 cup depending on your level), butter (2 sticks), Vinegar (1 ยฝ tbsp), and Worcestershire sauce (1 tsp). Season this as desired with cayenne, garlic powder, and salt.

I have provided a simple basic buffalo sauce recipe that will allow you to control the ingredients as well as personalize this dish. However, you can alternatively use a pre-made buffalo sauce instead (check the ingredients to make sure that it is sugar free).
What you will need to make slow cooker chicken .
- Chicken- 4 skinless chicken breasts (should weight between two and three pounds). Feel free to use dark meat if preferred.
- Chicken Broth- ยฝ cup. I always have low sodium billion on hand in my kitchen.
- Buffalo Sauce- 1 cup (see above for recipe or use bottled).
- Seasonings as desired. Season this as desired with cayenne, garlic powder, and salt.
- Butter- 2 tablespoons.
- Optional add-ins: chopped peppers, chopped meats such as pepperoni or sausage, beans (obviously not low in carbs), tomatoes, as well as cheese for a topping.
How to make slow cooker buffalo chicken
- I always spray my slow cooker with a bit of nonstick before I make a meal like this one, Place the chicken in the slow cooker.
- In a mixing bowl, combine together the broth and the buffalo sauce. Pour this over the chicken making sure that the chicken gets entirely covered with the liquid. Season as desired.
- Slow cook the chicken for eight hours on low stirring occasionally or until done (on high for about four hours if you are looking to cut down on time).
- Remove the chicken from the slow cooker and use two forks or your hands to shred it. Then return the chicken to slow cooker and stir in the butter and any optional add-ins.
- Keep the chicken on warm until you are ready to serve, stirring occasionally.
