Sugar Free Chocolate Espresso Muffins
I am sure that you might do this too.
You go into that fancy coffee shop, alone or with somebody else, and you check out what kind of yummy goodies are also in there. I mean, sometimes you need a yummy muffin to go with that coffee- right? There almost always seems to be this muffin or a similar muffin for sale when I look. However, they are not usually sugar free. Thus, I make my own.
I know that it is not just the yummy smell of these muffins that get people thinking about them.
It really could be the name- I mean with those ingredients. A chocolate muffin by itself seems like a good idea. However, when you add in some espresso, that muffin just gets better. Do you know what I mean?

There is a secret ingredient in this recipe.
Well, maybe it is not so secret as the ingredient is in the title of this recipe. That ingredient is espresso powder. If you do not have espresso powder, you can easily find espresso powder online. We will also be using unsweetened cocoa powder as well as sugar free chocolate chips.

As mentioned above, you will need espresso powder, unsweetened cocoa powder, and sugar free chocolate chips.
What you will need to make this recipe.
- Unsweetened Cocoa Powder- ยผ cup.
- Sugar Alternative- โ cup equivalent to sugar (granular works best).
- Flour (AP) -2 cups.
- Baking Soda- ยฝ tsp.
- And Baking Powder- 1 ยฝ tsp.
- Vanilla Extract- 1 tsp.
- Espresso Powder- 1 tablespoon.
- Eggs- 2.
- Milk- ยพ cup cup.
- Melted Butter- 1 stick.
- Chocolate Chips (sugar free)- 1 cup.
How to make Sugar Free Chocolate Espresso Muffins.
- Preheat your oven to 350 while you work and prep your muffin pan for nonstick.
- In a mixing bowl, combine together your cocoa powder, sugar alternative, flour, baking soda, and baking powder. Set this aside.
- Also, in another bowl, whisk together your vanilla extract, espresso powder, eggs, milk, and melted butter.
- Add the second bowl (wet ingredients) to the mixing bowl and mix until blended then fold in your chocolate chips.
- Bake for 20-25 minutes. If using the toothpick method to test 'doneness', take into consideration that if the toothpick comes back wet it may be simply melted chocolate chips. Thus, it is best to check it again in another area to be sure.
- Allow to cool.

- Espresso Powder- 1 tablespoon.
- Eggs- 2.
- Milk- ยพ cup cup go even more sugar free and use water instead adding a quarter at a time and testing for consistency.
- Melted Butter- 1 stick.
- Chocolate Chips sugar free- 1 cup.

Instructions
