Sugar Free Ginger Snap Cookies
This recipe is something that many people have been asking me about for a while.
So, it just seemed logical that I would figure out a way to make these cookies happen.
As you probably already know, Ginger Snap cookies are a standard cookie to eat during the holiday season.
The ginger snap cookies is known for its blended seasonings of both the fall and holiday seasons. I am referring to the ground ginger (hence the 'ginger' in the name) and the cinnamon that go into these yummy cookies.
Another famous ingredient in the Ginger Snap Cookie, of course, is the Molasses.
Molasses also gives the ginger snap cookie its darker than a sugar cookie shade. The darker shade of the cookie is really one main factor that sets this cookie aside from the others.
Certainly, molasses is a natural syrup that is also sweet to the taste.
That sweet to the taste is the result of sugar that is naturally in the molasses. However, because molasses is digested slower than regular sugar, it affects the blood sugar differently than sugar and can be allowed in small doses in a diabetic diet.
However, molasses does contain carbohydrates in addition to the sugar.
And as a result, many of us would rather avoid consuming it. Molasses also contains about 250 calories in it in the amount that this recipe would call for.
If you choose to use molasses in your Ginger Snap Cookies, please note that they will technically not be sugar free.
However, you are welcome to use it as long as it is okay for you to do so.
I should also mention that in this recipe we are using dark molasses as opposed to the blackstrap version.
Here are some ideas for molasses alternatives that you can use in this recipe.
This recipe calls for a quarter cup of dark molasses.
One alternative to this can be to mix together three tablespoons of granular sugar alternative (one that measures 1:1 with sugar in volume) with a tablespoon of water. You can try using a brown granular sugar alternative (one that measures 1:1 with sugar in volume) as well.
Another idea, is to try Organic Yacon Syrup.
Yacon Syrup is very similar to molasses when used in recipes. It is a natural sweetener that comes from tuberous roots of the yacon plant.
Make your Ginger Snap Cookies low in carbohydrates or or keto friendly.
To make this low carb, use a low carb all purpose flour.Also, to make this keto use a keto all purpose flour.
Lastly, to make this recipe gluten free, use an all purpose gluten free flour.
Also, if you are using Almond flour, please add an additional egg to the batter to aid in the binding process. I suggest anyone using any of the all purpose flour alternatives check the packaging to see if an additional egg or other binder for gluten free baking is needed as well.

- Flour (AP)- 2 cups.
- Ground Cinnamon- 1 teaspoon.
- Ground Ginger- 2 teaspoons.
- Baking Soda- 1 teaspoon.
- Butter- ยพ cup + 1 tablespoon ( 1 ยฝ sticks + 1 tablespoon), softened to room temperature.
- Granular Sugar Alternative- 1 cup. Please use one that measures 1:1 with sugar in volume.
- Egg-1.
- Molasses- ยผ cup, dark is preferred. One alternative to this can be to mix together three tablespoons of granular sugar alternative (one that measures 1:1 with sugar in volume) with a tablespoon of water. You can try using a brown granular sugar alternative (one that measures 1:1 with sugar in volume) as well.
Another idea, is to try Organic Yacon Syrup.
How to make Sugar Free Ginger Snap Cookies
- Preheat your oven to 325 and prep a cookie sheet for nonstick. I like to use Parchment Paper .
- In a medium bowl, sift together the flour, cinnamon, ginger, and baking soda. Set this bowl aside.
- Next, cream together the sugar alternative in a large mixing bowl. Once it is creamed, you can beat in the molasses and the egg.
- For the next step, we are going to add the contents from the first bowl with the dry ingredients (flour etc) to the large mixing bowl. Do this by adding half of the dry ingredients, mix gently and then add the remaining ingredients.
- Roll the cookies into balls and place onto the cookie sheet, far enough apart to allow from spreading as they bake. You can roll the cookies in additional granular sugar alternative if desired prior to placing onto the cookie sheet. Bake the cookies for 10-12 minutes or until they begin to 'crack'.
