Sugar Free Pumpkin Spice Cookies
There is a certain time of the year when you just cannot seem to get enough pumpkin.
This is that time of the year when we see pumpkins everywhere as well.
Pumpkins are actually quite a healthy thing to eat.
They are loaded in Vitamin A, low in saturated fat, and naturally do not have a lot of sugar or carbs in them.
There are a few ingredients that you will need to make this that you may not already have on hand.
You will need canned pumpkin that has no sugar added to it such as this one. Also, make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.

The recipe for Sugar Free Pumpkin Spice Cookies
What you will need to make this Sugar Free Pumpkin Spice Cookies recipe.
There are gluten free and lower carb options as well.
- Flour (AP)- 2 ½ cups. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
- Baking Soda- 1 teaspoon.
- Baking Powder- 1 teaspoon.
- Pumpkin Pie Spice- 1 teaspoon. (a substitute for this could be nutmeg+cinnamon).
- Sugar Alternative- 1 ½ cups granular.
- Butter- 10 tablespoons softened to room temperature.
- Vanilla Extract- 1 teaspoon.
- Canned Pumpkin- 1 cup.
- Egg-1.
How to make Sugar Free Pumpkin Spice Cookies
- Preheat your oven to 325. Prep your cookie sheet for nonstick.
- In a large bowl, mix together your flour, baking soda, baking powder, pumpkin pie spice. Set this bowl aside.
- Now in a mixing bowl, beat together the sugar alternative and the butter.
- Add the vanilla, pumpkin, and egg to the mixing bowl and continue mixing.
- Lastly, add to the mixing bowl, about a half at a time, the flour mixture from your first step.
- Bake for 18-20 minutes or until these appear to become firm. Remove from oven and allow to sit on the pan for a few minutes before transferring to a rack. Top with one of the optional recipes listed below these instructions once these cookies have cooled.
