This One Minute Sugar Free Chocolate Chip Cookie is the perfect quick snack!
I love that I do not have to share it with anyone as well!
One Minute Sugar Free Chocolate Chip Cookie.
For those of us who do not want to spend a lot of time trying to satisfy a craving.
Certainly, in this instance, that craving is for a chocolate chip cookie.
I really could have named this recipe something else.
That is because there are so many options for naming this. I mean, we could call this cookie a 'mug cookie', 'cookie for one' or even 'easy microwave cookie'. Thus, this is a good one!
There are a few things that you will need to make this recipe.
It is important that you use a microwave-safe mug. While you may think that your mug is safe for microwave use, it is always best to look on the bottom of the mug to make sure that it stated 'microwave safe' on it.
Use a mug such as this one.
DISHWASHER & MICROWAVE SAFE - Printed with superior ceramic inks that are fired on at a temperature of up to 1200 degrees. A truly permanent imprint that will never fade or lose its glow.
You will also need a few ingredients that you may not have on hand or in your pantry.
We will be using almond flour instead of regular wheat flour. Here are some other low carb flour choices that are available to use instead.
Also, you will need these ingredients.
Sugar free chocolate chips which you can find here.
In addition to the sugar free chocolate chips, you will need a brown sugar alternative. Surkin Gold is one example of a brown sugar alternative.
ALL-NATURAL - Made of erythritol, stevia, malt extract, and tagatose. Non-GMO with no artificial flavors, additives, or preservatives
DIABETIC FRIENDLY - Less than 1 GI and no effect on blood sugar. Gold is well-suited for low carb and Keto diets
MEASURES JUST LIKE SUGAR - Substitute regular or brown sugar 1:1. Perfect in tea, coffee, and sauces
GUILT-FREE COOKING AND BAKING - Retains delicious flavor at high temps and even caramelizes like brown sugar without the "cooling" after-taste.

How to make One Minute Sugar Free Chocolate Chip Cookie
While this recipe calls for making it in a microwave-safe mug, you can either eat it directly out of the mug or, transfer it to a board and slice into a normal cookie shape. I am not having thoughts of slicing mine in half and scooping something like ice cream in between the two halves to make a sandwich! 🙂
- I always like to prep my mug for nonstick before I begin. This will make it easier to remove the cookie in the end.
- Whip together the butter and sugar alternative in the bottom of the mug. Then add the egg yolk and cream the ingredients together.
- Stir in the remaining ingredients- adding a few chocolate chips to the top before you are ready to microwave.
- Microwave on high for 35-40 seconds or until done, checking on it every 10 seconds (I like to rotate the mug when I check on it),
- To slice the cake, gently pry the sides of the cookie away from the sides of the mug and tip over on to a flat surface to slice.
- Make a regular cookie by microwaving the cookie batter on a small piece of parchment paper instead of in the mug. Be sure to shape the cookie before you microwave it and monitor the cooking time as this may need to be adjusted.
